Lovely mix of cheeses, sauce, noodles and spinach.
4 oz lasangna noodles
1-10 oz pkg frozen chopped spinach
2 eggs or equivalent egg beaters
1 C cottage cheese
1 pkg green onion dip mix
1 Tbsp minced parsley
2 C spaghetti sauce
1-8 oz pkg of Mozarella cheese
1/4 C grated Parmesan cheese
1/2 tsp salt, if desired
Cook noodles and drain.Thaw and drain spinach thoroughly. Cover pan with thin layer of sauce. Beat eggs, add cottage cheese, spinach, onion dip, salt and parsley. Layer in this order: 1/2 of noodles, cottage cheese, spinach mixture, Mozzarela cheese, sauce. Repeat. Top with Parmesan cheese and bake at 350° for 30-35 minutes until bubbly. Freezes well unbaked.
