A tangy and sweet cake that children would love to help make.
1 pkg lemon or yellow cake mix
1 6-oz pkg lemon Jell-O
3/4 C canola oil
3/4 C hot water
1/2 C lemon juice concentrate
1 1/2 C powdered sugar
With electric mixer, beat cake mix, Jell-O, oil, hot water, and eggs according to cake package instructions. Pour into greased 9″ x 13″ cake pan. Bake at 350° F for 35 minutes or until toothpick inserted into center of cake comes out clean. While cake is hot, punch holes all over the top with the handle of a wooden spoon.
In a small bowl, combine lemon juice and powdered sugar. Pour into holes made by wooden spoon. Refrigerate until ready to serve. It is not necessary to frost this cake, because it is so moist by itself, but you may choose to top with fat-free Cool Whip.
