Here’s a Thai-inspired peanut sauce that is delicious when mixed with noodles or used as a salad dressing.
1/2 C peanut butter (creamy or chunky)
1/2 C boiling water
1 tsp soy sauce
2 Tbsp lemon juice concentrate
1 tsp ground ginger
1 tsp sesame oil
1/2 tsp minced garlic
In a small bowl, combine ingredients. Whip with wire whisk until creamy.
Serving Suggestion: Toss with your favorite pastas or use as a dressing for a pita sandwich.
Servings: 1 cup (approximately 6 servings)
