Cottage Cheese Balls

A simple and delicious vegetarian entree to make for dinner tonight… 1 C cottage cheese (large or small curd)* 1 C quick oats 1 C bread crumbs 1 med onion minced 2 eggs* 1 tsp ground sage 1 tsp salt Pinch of sugar In medium bowl, combine all ingredients mixing well. Form into balls and fry in a small amount of oil in a skillet over medium-high heat

Ambrosia

Ambrosia got it’s name because it was thought to be the food fit for the gods! Try this “heavenly” mix today. 1 3/4 C coconut milk 1/4 C frozen pineapple juice concentrate 1/3 C tapioca 3 Tbsp honey 1/2 C unsweetened coconut, toasted, (opt.) 1 tsp vanilla 2 C chunks of pineapple (fresh is best) 2 C red seedless grapes 1 C fresh orange pieces, drained Combine coconut milk, pineapple concentrate, tapioca and honey and bring to boil in a sauce pan over medium heat, stirring constantly

Adventist Community Services Disaster Response assessing needs     On Monday, May 20, the second consecutive day of tornadoes in Oklahoma, an EF5 tornado with peak winds of 190 mph, tore through part of the state, touching down on the town of New Castle, Moore and other Oklahoma City suburbs. The tornado spent 40 minutes traveling 17 miles on the ground and devastated an estimated 30 square miles that included neighborhoods and two elementary schools

Our older two kids, ages four and six at the time, scrambled out to the minivan and quickly picked up plastic bags of food and carried them into the kitchen. Our youngest boy, who was about two, wanted to help and seemed to get lost in the flurry of his older siblings.
