1- 12-14 oz tub of extra firm tofu
1/2 C eggless mayonnaise (a recipe is posted on website)
1 red bell pepper, finely chopped
2 stalks of celery, finely chopped
1 sm onion, finely chopped
1 carrot, finely chopped
2 Tbsp pickle relish
1 1/2 Tbsp prepared mustard
1/4 tsp turmeric
salt and pepper to taste
Drain and paper towel tofu thoroughly. Mash in a bowl and add all ingredients.
