Bran Muffin Bread- Bread Machine

Delicious and healthy and easy to prepare in your bread machine…

1 1/4 C lukewarm water
3 Tbsp molasses
2 tsp sugar
2 Tbsp margarine
1 tsp salt
3 C unbleached white flour
1/2 C bran flakes cereal
1 1/4 tsp yeast (bread machine)
1/2-3/4 C raisins

Measure first 8 ingredients (set raisins aside) in the order listed into baking pan. Select “Basic” and 1 1/2 pound loaf setting on bread machine. At the “add ingredients” beep, add raisins. Time: 3:50.

Glorified Rice

Scrumptious and a so entirely healthy breakfast dish.

1 C cooked rice (may substitute other cereals)

1 C pineapple juice
1/2 C water
1/4 C walnuts
1/4 C cashews
1/2 tsp salt
2 tsp vanilla
6 C cooked rice
1 C chopped dried fruit
1 1/2 C pineapple juice
1/4 C cashews
1/4 C walnuts
2 C crushed pineapple
2 apples, chopped in bite size pieces

Blend first seven ingredients in blender. Mix remaining ingredients in a large bowl and pour blended mixture over top. Stir well and chill several hours.

Servings: 6

Hot Carob

A delicious hot drink to warm you on a cold day.

1/3 C turbinado sugar or sucanat
1/4 C carob powder
1/4 C Roma
Dash of salt
1/3 C water
1 qt your favorite soy or rice milk
3/4 tsp alcohol-free vanilla

Place all ingredients in a blender and blend well. Pour into saucepan and heat slowly. Adjust to taste and serve.

Servings: 4-6

Mom’s Best Carob Fudge

Scrumptious dairy and chocolate free fudge.

2 C (1-12 oz pkg) carob chips

1 C all natural peanut/almond/cashew butter
1 C rinsed raisins
1 C thinly sliced almonds,or coarsely chopped pecans
1 C shredded unsweetened coconut

Soak the raisins in hot water. Over low heat,in a thick bottomed quart sauce pan, heat together carob chips and nut butter. When melted, remove from heat and quickly stir in remaining ingredients. Pat immediately on a cookie sheet, 1/2 inch thick. Freeze 20 minutes. Cut into 1 inch squares. Store in zip lock bags in freezer. Serve cold.
