A rich and tasty vegetarian version of Stroganoff…simply delicious.
1 20-oz can Worthington Vegetable Steaks, cut into strips and breaded in flour
1 med onion, chopped
1 6-oz can sliced mushrooms, drained (or 3/4 C sliced fresh mushrooms)
1/4 tsp garlic powder
2 Tbsp McKay’s Beef-life Seasoning
1/2 tsp salt
2 Tbsp soy sauce
1 C hot water
1 Tbsp dried parsley
2/3 C sour cream*
1/3 C grated cheddar cheese*
2 Tbsp canola oil
In a large saucepan over medium-high heat, saute steaks and onion in 2 Tbsp of oil. When onion is tender add mushrooms. Add garlic, seasonings, and water and simmer for 20 minutes or until thickened. Turn heat off and add sour cream and cheese, stirring until cheese is melted.
Pour sauce over cooked noodles of your choice.
*Lite Version Substitution
2/3 C fat-free sour cream
1/3 C grated reduced-fat cheddar cheese
Helpful Hint: To stretch this recipe (for unexpected company), add additional beef-like seasoning and soy sauce and 1/2 to 1 C water (in which is dissolved 1 Tbsp cornstarch). Bring to a boil, stirring constantly. Do this before adding cheese and sour cream.

O La La! Green beans and almonds have never tasted this good before.
1 lb green beans, ends trimmed, cut into 1″ pieces
1/4 C margarine
1 1/3 C thinly sliced onion
6 Tbsp silvered almonds
In large kettle over medium-high heat, cook green beans in a small amount of water. Drain and set aside.
In a small skillet over medium-high heat, saute onions and almonds in margarine until almonds are golden and onions are tender.
Place beans in a glass serving dish and top with onions and almonds. This reheats well in the oven.
*French for “green beans garnished with almonds”

Rich warm sauce with hints of vanilla and rum poured over the top of the apple cake. Yum!
2 C sugar
1/2 C butter, room temperature
2 eggs
2 C flour
2 tsp soda
2 tsp cinnamon
1 tsp vanilla
4 lg apples
1 C chopped walnuts
Sauce:
1 C butter
1 C brown sugar
1 C sugar
1 C half and half or whip cream
1 1/2 tsp vanilla
1/2 tsp rum extract (optional)
Combine in a large mixing bowl sugar, butter, eggs, flour, soda, cinnamon and vanilla. Mix together. Shred the apples unpeeled. Add the apples to cake mixture. Add nuts. Stir gently. Bake in greased 9 by 13 cake pan. at 350° for 40 minutes. Set aside to cool.
Combine butter, sugar, brown sugar and cream in a 2 quart sauce pan and cook over medium heat for 10-15 minutes stirring constantly. Add rum and vanilla extracts. Serve hot over apple cake.
