Sweet Potato Gingerbread Muffins

Ingredients:

3/4 c. creamy almond butter
1 1/4 c. mashed cooked sweet potatoes
1/4 c. blackstrap molasses
1/4 c. maple syrup
1 grated apple
2 large organic eggs
2 T. chia seeds
1/4 c. coconut flour
1 t. baking soda
1/2 t. sea salt
1 T. cinnamon
2 t. ground ginger
1/4 t. nutmeg

Directions:

  1. Preheat oven to 325 degrees.
  2. Grease an 8×8-inch glass baking dish with coconut oil.
  3. Place all ingredients into a food processor fitted with the “s” blade and process until smooth and combined. You can also use a hand-held mixer but the food processor is easier and creates a smoother batter.
    Pour batter into greased and lined muffin tins.
  4. Bake for 25-30 min, or until top begins to split.
  5. Muffins will be fragile hot out of the oven but will firm up once cooled.
  6. Optional – glaze with dairy-free whipped cream or frosting

Delicious Pumpkin Pie

Scrumptious and creamy without added oils or dairy and very easy to make.

1 C maple syrup

2 tsp vanilla
1 Tbsp cinnamon, coriander and ginger
1 1/2 lb tofu
1- 15 oz can pumpkin

Blend tofu with maple syrup, salt and flavorings. Mix all ingredients together. Pour into unbaked pie shell. Bake at 350° for 1 hour and 10 minutes.

Tofu Mayonnaise

Here’s a dairyless version of regular mayo that’s simple to prepare.

1/2 block of a 12-14 oz plastic tub (firm or extra firm) or 1 aseptic package

1/4 C lemon juice
1 1/2 tsp honey
1 tsp dry mustard or prepared Dijon mustard
1 tsp nutritional yeast
1/2 tsp sea salt
1/2 C oil

Drain and paper towel the tofu to absorb water. Crumble into a blender of food processor. Add all ingredients except oil and blend until very smooth. Very slowly add oil in a thin stream until thick. Will thicken considerably more during refrigeration. Will keep a week to 10 days.

Pea Salad

If you like peas, you will enjoy this creative pea salad.

1 can peas

2-3 hard-boiled eggs
imitation bacon bits to taste
1 Tbsp vinegar
1/4 C mayonnaise
paprika to taste

Slice hard boiled eggs into bite sized pieces. Mix all ingredients into a large serving bowl. Top with paprika. Chill before serving.
