A tasty spread that goes well with a variety of breads or crackers.
3 oz package cream cheese
8 oz package shredded longhorn cheese
1 Tbsp lemon juice
1/4 tsp garlic powder
Dash of red pepper
1/4 C pecans, chopped
1 tsp paprika
1 tsp chili powder
Let cheese stand at room temperature to soften.
Combine cheeses, lemon juice, garlic powder and red pepper. Stir in pecans. Shape into a roll and sprinkle with a mixture of the chili powder and paprika.
Chill and then let stand at room temperature for 10 minutes before serving.
Servings: varies

Mediterranean splendor in the form of a salad with color and taste…
1 qt large green Romaine leaves, torn
1/2 C chopped green bell pepper
1/2 C sliced cucumber
2/3 C dried tomatoes or halved grape tomatoes
1 dozen ripe olives, halved
1 med sweet onion, sliced and halved
Dressing:
1 Tbsp olive oil
1 Tbsp fresh lemon juice
2 Tbsp herb flavored feta cheese, crumbled
Prepare Salad dressing by mixing oil and lemon juice together. Toss first 6 ingredients with dressing. Add cheese and toss again.
Servings: 6

An elegant bread for special occasions or guests. Impress them with these rolls at your next dinner or function.
1 lb cheddar cheese, grated
1 sm can (4 oz) chopped black olives
1 sm can (4 oz) chopped green olives
6 green onion tops, chopped
1 can (4 oz) mild green chilies, chopped
1 8oz can of tomato sauce
1/3 C salad oil
1 tsp garlic powder
3 hard boiled eggs
18 hard Vienna/Italian rolls
Combine cheese, olives, onions, green chilies, sauce, oil, garlic powder, and eggs in large mixing bowl. Remove center know from rolls or cut a circle out of each bun the size of an egg. Reserve bread tops. Stuff filling into each roll, replace a top on each roll. Wrap in foil. Bake at 300° for 30 minutes.

Wonderful healthy snack or dessert that can be eaten “on-the-go” or at home.
3/4 C Adams natural peanut butter
1/2 C honey
1/4 C water
2 1/4 C toasted quick or old-fashioned oats*
1/2 C instant non-fat dry milk
1/2 C raisins
*Toasted Oats:
Place 2 1/4 Cups quick or old-fashioned oats, uncooked in ungreased 15 by 10 inch pan.. Bake at 350° for 18-20 minutes or until light golden brown. Col and store in tightly covered container in refrigerator up to six months.
Combine peanut butter, honey and water in one quart sauce pan. Bring to boil over medium high heat, stirring occasionally, then reduce to medium heat. Simmer for about two minutes, stirring constantly. Add to combined remaining ingredients, mixing well. Press firmly into greased eight inch square baking pan. Chill several hours or until firm then cut into bars. Store bars in a tightly covered container in the refrigerator.
