The Gift of Friends

Dear God: Several years ago my seven and three-year-old grandsons and I went to a friend’s house for a bonfire. The three-year-old was the youngest there, but I wasn’t anywhere nearly the oldest. Don, in his 80s, topped the age charts. But there was no uneasy separation. Many jumped in to help the young boys roast marshmallows and dip apples. Teens helped cook over the open fire—youngsters rubbing shoulders with those who’d cooked like this for decades. Instead of a generational divide, we made a circle of folding chairs around the bonfire.

Thank you for the mix of friends from all ages and all walks of life. Remind me that I can learn and I can teach—it doesn’t matter the age. There’s wisdom in gray hairs and I can be taught by those my junior. Help me to be teachable and not afraid to speak a good word to those of any age.

In Jesus’ name. Amen.

When I’m Afraid

Dear God: When I can’t sleep, the nights are long. Then the dark shadows heighten my fears. Evidently David experienced this. In Psalm 6:6, he says, “I am weary with my sighing; every night I make my bed swim, I dissolve my couch with my tears.” Instead of crying I worry. I worry about finances, my health, family members, the future–the list goes on. Most of my worries are irrational and unnecessary, but I do it anyway. Please deliver me from being a pessimistic doubter. Give me the the ability to view my life as a glass half-full, instead of half-empty.

Fear is a human experience that cannot be denied. It happens to everyone. When it creeps into my heart, I can’t flip a switch and make it go away. But with David I can say, “When I am afraid, I will put my trust in You” (Psalm 56:3). Thank you for making this possible!

In Jesus’ name. Amen!

Apple Cake With Warm Sauce

Rich warm sauce with hints of vanilla and rum poured over the top of the apple cake. Yum!

2 C sugar

1/2 C butter, room temperature
2 eggs
2 C flour
2 tsp soda
2 tsp cinnamon
1 tsp vanilla
4 lg apples
1 C chopped walnuts

Sauce:

1 C butter
1 C brown sugar
1 C sugar
1 C half and half or whip cream
1 1/2 tsp vanilla
1/2 tsp rum extract (optional)

Combine in a large mixing bowl sugar, butter, eggs, flour, soda, cinnamon and vanilla. Mix together. Shred the apples unpeeled. Add the apples to cake mixture. Add nuts. Stir gently. Bake in greased 9 by 13 cake pan. at 350° for 40 minutes. Set aside to cool.

Combine butter, sugar, brown sugar and cream in a 2 quart sauce pan and cook over medium heat for 10-15 minutes stirring constantly. Add rum and vanilla extracts. Serve hot over apple cake.

Haricots Verts Almandine

O La La! Green beans and almonds have never tasted this good before.

1 lb green beans, ends trimmed, cut into 1″ pieces
1/4 C margarine
1 1/3 C thinly sliced onion
6 Tbsp silvered almonds

In large kettle over medium-high heat, cook green beans in a small amount of water. Drain and set aside.

In a small skillet over medium-high heat, saute onions and almonds in margarine until almonds are golden and onions are tender.

Place beans in a glass serving dish and top with onions and almonds. This reheats well in the oven.

*French for “green beans garnished with almonds”

Servings: 8

Fresh Vegetable Medley

What better way to enjoy the vegetables of summer than in this flavorful medley!

2 C fresh or frozen corn kernels (approx. 2 ears of fresh corn)

1/2 C chopped green pepper
1 whole sweet onion, chopped
1 C sliced zucchini
2 med tomatoes, diced (or canned and drained, 1C)
2 Tbsp olive oil
1/2 tsp Lawry’s salt

Saute first four ingredients in oil, approximately 3 to 4 minutes, stirring frequently. Add tomatoes and salt and continue cooking on medium heat for 2 to 3 minutes.

Servings: 6
