Stuffed Bell Peppers

Delicious stuffed peppers will grace your table and delight palates.

6 bell peppers

6 green onions,sliced
3 Tbsp olive oil
3 eggs
1/4 tsp salt
2 Tbsp milk
1 1/2 C cottage cheese
2 pkgs Golden George Washington Seasoning
3 slices dry bread crumbs

Optional home made sauce:

1/4 C chopped onion
1/4 C green pepper
1 clove of garlic, crushed
2 C tomato puree
1/4 tsp salt
1/4 tsp basil

Saute onions and green peppers in olive oil, then add rest of ingredients. Simmer until well blended.

Cut peppers in half, cleaning out seeds and boiling for 3-5 minutes in water. Drain and set aside. Slice green onions, including tops and saute in oil oil. Beat eggs, salt, and milk together and add to frying pan and scramble. Put in medium bowl and add cottage cheese, 1/4 tsp salt, 2 packets George Washington Seasoning and bread crumbs, mixing thoroughly. Stuff mixture into each pepper cavity. On the bottom of a casserole dish place a light layer of spaghetti sauce, then place stuffed peppers on this. Cover the tops of the peppers with more sauce. Bake at 350° for about 20 minutes.

Meatless Chili

A hearty, spicy, stomach warming chili made even more healthful with the addition of soybeans and wheat berries.

1/2 C soybeans

1 C pinto beans
1/2 C whole wheat berries
1 minced clove of garlic
2 C shopped onions
2 Tbsp oil
1 C cubed tofu
2 tsp oregano
1 chopped bell pepper
1 hot pepper
1 1/4 C tomato sauce
3 or 4 chopped tomatoes

Cook beans and wheat until tender. Saute the garlic and onions in the oil. Add the tofu and cook lightly. Add remaining ingredients. Simmer for 20 minutes. Stir the sauce into the cooked beans and thin with whey or water if desired. Simmer gently and additional hour or so. Flavor will be even better if the chili stands for a while and is reheated.

Servings: 4-6

Harvest Muffins

Packed with flavor, the bits of nuts and fruit make this muffin memorable and tasty.

1 C granulated sugar*
2 C unbleached white flour
2 tsp ground cinnamon
2 tsp baking soda
1/2 teaspoon salt
1/2 C chopped pecans
1/2 C grated coconut (optional)
1/2 C raisins
2 C grated carrots
1 med apple, grated
3 eggs*
1 C canola oil*
1 1/2 tsp vanilla extract

In a large bowl, combine dry ingredients. Set aside.

In a medium bowl, combine raisins, carrots, apples, eggs, oil, and vanilla.

Pour liquid mixture all at once into dry ingredients. Mix gently just until moistened. Fill greased muffin cups 2/3 full. Bake at 350° F for 15 to 18 minutes or until golden. Turn onto cookie racks to cool.

*Lite Version Substitution
2/3 C granulated sugar
3/4 C egg substitute
1/2 C Prune Whip

Servings: 20 muffins

Graham Biscuits

Unique biscuit recipe that uses graham cracker crumbs which would give the biscuits a different color and sweeter taste.

1 C all purpose flour

1/2 C whole wheat flour
1 C graham cracker crumbs
2 Tbsp white sugar
1 tsp salt
4 tsp baking powder
1/2 tsp cream of tartar
1/4 C margarine
1 C soy milk

Put first 7 ingredients into bowl. Stir thoroughly. Cut in margarine until crumbly. Pour in milk. Stir in quickly to combine. Dough should be soft. Turn out on a lightly floured surface. Knead gently 8 -10 times. Roll or pat 1/2 – 3/4 inches thick. Cut with small round cookie cutter. Place on greased cookie sheet and bake at 450° for 12 -15 minutes.

Servings: 12-14

Broccoli and Pea Salad

A delicious high fiber raw salad that you can serve any day or for special occasions.

1 lg bunch of broccoli cut into bite size pieces
1 sm pkg of frozen peas, thawed or fresh summer peas
2 stalks of celery, sliced thin
1/4-1/2 sliced almonds, dry roasted
1 tsp dill (or more to taste)
1/2-1 C Vegenaise mayonnaise (grape seed is best)

Place vegetables in a large mixing bowl. Add the almond and mix. Add dill and vegenaise mixing thoroughly. Serve at room temperature.

Servings: 4-6
