Vegetarian "Turkey Legs"

Delicious “faux” entree that will satisfy the most finicky of tastes.

2 C Hi Ho or Ritz crackers,crushed

1 C pecans, chopped
1- 20 oz can Worthington Vegetarian Burger
1 med onion, chopped
2- 10 1/2 oz cans of cream of mushroom soup
2 C cheese, grated (less if desired)
6 eggs
2 Tbsp McKay’s Chicken or Beef Style Seasoning
1/2- 1 soup can water
cooking oil

Mix cream of mushroom soup and water (be sure the mixture is not too thin). Set aside. Mix all other ingredients in large bowl. Use hands to shape mix into palm size patties no thicker than 1 inch. fry patties until browned but not completely done. Pour 1/2 cup of mushroom soup mixture in bottom of 9 by 13 dish. Place partially cooked patties in dish and cover with remaining soup mixture. Bake at 325° for at least 30 minutes.

Everyone Wants My Body

Everybody wants my body. Some, so they can fill me with beer. Others, so they can adjust my appearance to match their definition of “beautiful.” Still others harangue and wheedle about how I must reduce my cholesterol, increase my carbs, reduce my carbs, drink flax seed tea, or purchase new running shoes from only their company.

Everybody wants my body. If I drink this, they say, I’ll “have more fun.” If I apply that, I’m more “kissable.” If I watch this, I’ll be “more relaxed.” From the privacy of my speeding auto, I am accosted by the makers of houses, cars, beer, shoes, mortgages, graduate education, the world’s finest candy, dental implants, and three more brands of beer. All seem to know exactly what I need, and why I need it. “Right Now!”

Newsweek, TIME, People, The UTNE Reader, Mother Jones, and WORLD Magazine have each dedicated scores of pages to telling me about my body. Although many have included ads convincing me to ask my doctor for certain prescription medications that will “fix me,” I’ve noticed that the fine print warns that their solutions may also cause my body to break down in disgusting ways. Regardless, they want my body.

It’s all offered so attractively that I hear myself agreeing, desiring, deciding, and handing over the Master Card. Sometimes I go through the process alone, captivated by the ad design and copy. Sometimes I argue it through with my wife or another friend. Sometimes I listen to counsel. Sometimes I don’t. The dealers are all hoping I won’t, that I’ll just get in line and give them my body so they can drape me, fill me, medicate me, and sell me their “stuff.”

Then God shows up, saying that he would like to have my body for his temple. Seems he’d like to live there so other folks can visit him wherever I am.

That could call for some significant redecorating (See 1 Peter 2:5, and 1 Corinthians 3:16 and 6:19).

Vegetable And Choplet Stir Fry

In the mood for something Asian-inspired? This healthy, low fat, stir fry has all the ingredients to satisfy…

1 can pineapple chunks (in own juice)

2 Tbsp lemon juice
4 Tbsp vegetable oil
2 C broccoli florets
1 med onion, cut into wedges
1 C carrots, thinly sliced
1 can choplets, sliced into 1 1/2 strips
1 med red pepper, cut into thin strips
1/4 C soy sauce
1 1/2 Tbsp cornstarch

Pre-made hot rice to serve 4-6

Drain pineapple, reserve juice. Combine juice, soy sauce, lemon juice and cornstarch. Set aside. Heat oil in uncovered wok over high heat for 2 minutes. Add sliced choplets stirring for 2 to 3 minutes or until browned. Remove choplets. Reheat remaining oil then add vegetables, stir fry for 2 to 3 minutes. Add juice mixture stirring until thickened. Stir in pineapple chunks and choplets. Cover and cook 2 minutes. Serve with hot rice.

Curried Gluten and Potatoes

This would star as a delicious side dish or perhaps as a main dish, too.
 

2 lg potatoes
4 C water
1- 20 oz can vegetable scallops
2 Tbsp oil
2 tsp curry powder
1 1/2 tsp sugar

Cook potatoes with skins on. Cool, peel, and cut into chunks to make 2 cups. Drain scallops, reserving the liquid. Cut into one inch pieces. In hot wok add oil, curry, potatoes, and scallops. Stir fry for 2 minutes. Add the sugar and reserved liquid. Cook covered until the sauce begins to thicken.

Fudgy Carob Brownies

Brownies have been a favorite with families for years.

1 C whole-wheat pastry flour
1 C oat flour
1 C coarsely chopped walnuts
1/2 C canola oil
1 C honey
4 Tbsp alcohol-free vanilla
2/3 C your favorite soy or rice milk
1 tsp salt
1 1/2 tsp Roma
1/2 C carob powder

Preheat oven to 375° F. Spray an 8″ x 8″ baking dish with vegetable spray. In mixing bowl, stir together first three ingredients. Blend remaining ingredients in blender on high for about one minute or until smooth. Pour liquid mixture into dry mixture and fold together quickly.

Bake at 375° F for 15 minutes. Reduce heat to 350° F and bake for 15 minutes more. Do not overbake. Cool, cut into squares. Frost as desired.
