Bread Machine Wheat Bread

August 2, 2017 By admin

This recipe can be prepared in your bread machine and removed after the dough cycle and baked in traditional pans.

1C and 1Tbsp warm water

3 Tbsp honey or brown sugar
2 Tbsp virgin coconut oil or Earth Balance Vegan Spread
1 1/2 C whole wheat flour
1 1/2 C bread flour
1 1/2 tsp salt
1 Tbsp gluten flour (optional)
2 tsp Active Dry Yeast or 1 1/2 tsp bread machine/fast rise yeast

If you plan to bake in your bread machine, start it according to your own machine’s directions. Otherwise, program the machine for the dough cycle. After the cycle has completed, remove the dough, shape and place in one oiled bread pan or oiled mini bread pans. Bake at 350° for 20 minutes for small loaves. Bread should be golden on top. Remove bread from pans and place on cooling rack to cool.

Servings: makes a 1 1/2 pound loaf or 4 mini loaves

Tofu Cheese Cake

August 2, 2017 By admin

The thought of cheese cake conjures up rich, smooth and creamy. Try this dairyless version for less fat and sugar.

4 C tofu, mashed

1/4 C pineapple juice
2/3 C honey
1/2 C oil
1 graham cracker pie shell
1/2 tsp coriander
2 Tbsp vanilla
1/2 tsp lemon juice of lemon extract
1 1/2 tsp salt
4 C frozen strawberries, thawed

Rinse, drain, mash and measure tofu. Put tofu in bowl and add remaining ingredients. Stir well. Blend half of filling on high, stopping the blender 2 to 3 times to stir contents. Repeat until filing is velvety smooth. Pour evenly over the graham cracker pie shell. Repeat procedure with the other half of filling and add to the pie shell. Bake at 350°  for approximately 20 to 30 minutes or until edges are lightly browned and the middle firm. When cool, cover with thawed strawberries.

Servings: 8

Non-Dairy Cheese Sauce

August 2, 2017 By admin

Can’t use dairy products or trying to use less? Try this versatile recipe in many of your cooking projects.

1/2 C raw cashews, rinsed

1 C hot water
1 C cooked cornmeal ( 1/4 C cornmeal to 1C water)
1-3 Tbsp nutritional yeast flakes
1 Tbsp chicken style seasoning (opt.)
1/4 tsp garlic powder
1/2 tsp onion powder
1 Tbsp lemon juice
1 tsp salt
1 Tbsp lemon juice
2- 4 oz pimentos in jar

Cook 1/4 cup of cornmeal in 1 cup of water, stirring until lumps are disolved.  Simmer until thick. Blend cashews in water until very smooth. Add hot cooked cornmeal and continue blending. Add seasonings, pimentos and blend until smooth.

Use this sauce in place of cheese. Can be used over baked potatoes, in Mexican food, lasanga, pizza, etc. Yummy!
