Sand Dollars and Snow

March 5, 2017 By admin

Dear God: Thank you for making our world so diverse. I used to live in the Midwest where it’s cold much of the Winter. While living there, I remember taking a trip to Florida to collect shells on a sunny beach.. Back home, the sand dollars I had carefully picked, then packed and brought home, were drying on the picnic table outside. But something amazing happened. It snowed on my beautiful white sand dollars.

I enjoyed showing my four-year-old grandson the miracle of white. I told him that you’ve promised to take our horrible blood-red sins and make them white as snow or as white as wool (Isaiah 1:18) or maybe as white as the beautiful sand dollars you created.

In Jesus’ name. Amen!
Dixie Dee Whited writes from Arizona.

Garbanzo Loaf

March 1, 2017 By admin

Here’s a very versatile recipe that can be made into a spread or entree. Adding to it’s versatility are optional ingredients that can be added in while making it a spread.

1 lg onion, chopped

1 green pepper, chopped
2 C cooked garbanzos (may use can but drain)
1/2 C peanut butter
1 C cooked Spanish style tomatoes
2 Tbsp flour
1 tsp sage
1 tsp garlic powder
1/2 to 1 tsp seasoned salt
1 C seasoned bread crumbs

Saute onion and green pepper in small amount of water until soft. Place onions and green pepper in a food processor with the rest of the ingredients blending until smooth. Place mixture into a well sprayed 9 by 13 inch pan. Bake at 350° for a minimum of 1 hour to a maximum of 1 and 1/2 hours. If using for a spread be careful not to over dry mixture in the oven. If using as an entree bake for 1 hour.

After cooling, break up loaf and mash with regular or soy mayo, chopped celery, olives, pickles, etc., to make spread. Loaf can also be frozen for use later.
