Naturally sweetened carrots that will have them kicking their heels!
3 lg carrots, sliced
1/2 C unsweetened pineapple juice (or orange juice)
1/2 tsp salt
1 Tbsp oil
1 Tbsp frozen unsweetened concentrated orange juice
1 chopped onion
chopped parsley as garnish
Saute the onion in oil. Cook sliced carrots with pineapple juice and salt for 10 minutes. Stir in sauteed onions and frozen orange juice concentrate and heat thoroughly. Sprinkle chopped parsley over carrots before serving.

A salad with versatility. Use as an entree with bread on the side or as a salad with other dishes.
1 pkg- 12 oz whole wheat Near East couscous
8.5 oz jar sun dried tomato pesto
4 C packed chopped fresh spinach
1- 16 oz pkg tomato/basil feta cheese, crumbled
1/4 C pine nuts, toasted
Prepare couscous in pot as directed on package. In large bowl, mix and toss all ingredients and serve.

Yet another simple dessert recipe that literally can be made by “dumping”.
1 20-oz can crushed pineapple, undrained
1 20-oz can cherry pie filling
1 pkg yellow cake mix
2 C chopped walnuts
1/2 C margarine
Dump crushed pineapple and cherry pie filling into a 9″ x 13″ cake pan. Pour dry cake mix over fruit. Cover with walnuts (or pecans). Melt margarine and pour evenly over walnuts. Bake at 350° F for 55 minutes. Cool.
Servings: 15

This version of tamale pie uses eggs and milk, making it a little richer.
1/2 C canola oil
1 med onion, chopped
1 16-oz can tomatoes, drained and chopped
1 C whole kernel corn (frozen or canned)
1 tsp salt
1 C skim milk
1 1/2 C yellow cornmeal
1 16-oz can sliced black olives, drained
3 eggs (or 3/4 C egg substitute)
2 tsp chili powder
In a large kettle over medium-high heat, saute onion in oil until tender. Add all other ingredients in order, stirring well. This mixture will thicken but tends to scorch easily, so stir constantly until thickened. Pour into a well-greased bread or loaf pan. Bake at 375° F for 35 to 45 minutes or until top is golden brown.
Serving Suggestions: This loaf can be turned out onto a platter and garnished with parsley.
