Kale Salad

A new way to serve this healthy green leafy vegetable…it’s not just a garnish anymore!

1 bunch fresh kale, torn in small pieces
1 red sweet onion, thin julienne slices
1 avocado, diced into 1/2″ cubes
1 C cherry tomatoes, cut in halves
1/2 C slivered almonds or pine nuts

Marinade:

1/2 C olive oil
2 Tbsp fresh lemon juice
2 Tbsp Nama Shoyu or Bragg’s
Fresh garlic, to taste
Fresh ginger, to taste
Cayenne pepper, to taste

Blend marinade ingredients in a blender until creamy, adding as much or as little garlic, ginger and cayenne as you desire. Suggested is 2 cloves of garlic, 1 pinch of ginger, and 1 pinch of cayenne.

Pour marinade over kale and bruise by pounding it with a bamboo or wood utensil. Add onion slices and toss.
Let marinade at least overnight.

When ready to serve, add cubed avocado, halved cherry tomatoes and nuts.

Servings: 2-3 (depending on the bunch size of the kale and the sizes of the other veggies)

Fruit-Nut Breakfast Rolls

Naturally sweetened rolls that are made with preprepared dough to shorten the prep time. Dee-lish!

1/2 Cup pineapple juice

40 dates
1 banana
coriander, as desired
raisins, as desired
chopped nuts, as desired
prepared 2-2 1/2 lbs of basic bread dough

Place in blender pineapple juice, dates and banana and blend until smooth. Grease baking pan and spread a little of the filling mixture on the bottom of pan. Sprinkle with nuts.

Roll out dough to a 1/4 inch thick rectangle on a lightly floured board. Spread filling mixture over dough. Sprinkle with raisins, nuts and coriander. Roll up as for a jelly roll. Slice into 1 inch rolls and turn cut slices down onto fruit mixture in baking pan. Cover and let rise 45 minutes or until rolls in pan touch each other. Bake at 350° for 20-30 minutes or until done. Leave rolls in pan to cool and prepare glaze.

Glaze:

1 C dry soy milk powder
1/4 C honey
1 tsp vanilla
3 tsp water or as needed for desired consistency to drizzle

Beat together until smooth. Drizzle over warm rolls. Serve when glaze becomes thickened on rolls.

Servings: 6

Teddy Sings

I was busy on my computer with the radio tuned to a Christian station. The dog lay nearby and suddenly started to gurgle, yodel and finally break into a howl. Teddy howls to special songs, or perhaps the term is best defined by “sings along.” It all started with a TV commercial for carpeting when he was a young dog. Almost five years later, we still mute that commercial since we aren’t sure if he sings out of annoyance, pain, or pleasure.

However, riding in the car with the radio on, Teddy has howled to several other songs. Today, the song, “I Can Only Imagine,” by MercyMe started his performance. I love the words to that song—nearly always bring a tear to my eye as I visualize how I might react to standing before my Creator in worship. So it did seem fitting that Teddy would select that song as one of his special numbers. Since I believe that even God’s creatures would recognize His awesome beauty, love and Divine energy. Surely Teddy would howl for God when in His presence. Perhaps he understands something about that song that I can’t comprehend.

What is my takeaway from Teddy howling to “I Can Only Imagine?” Well, perhaps when I am tempted to be critical about the way that some of God’s children express their love for Him—in artistic or musical forms—I can remember that some praise is best expressed from one’s very primitive depths—an innate howling at the moon. I may never be a spontaneous arm-raising Christian, but I hope I’ll think about praise the next time Teddy howls to a song. I trust that I won’t just press the mute button every time my spirit wants to praise God. That I will let the praise flow into song, prayer, writing, offerings, hugs, cooking, calling a friend… “Let everything that has breath praise the Lord” (Psalms 150:6, NIV).

Yummy Banana Nutty Bars (for kids only)

A wonderful way to start the day or as a healthy after-school treat for the kids.

4 bananas
3-4 C your favorite carob chips
1-2 C your favorite chopped nuts

In microwave or double boiler, melt carob chips. While carob chips are melting, peel and cut bananas in half. Place chopped nuts in small bowl. Remove melted carob chips from heat. Dip bananas into melted carob then in chopped nuts. Pace on waxed paper to set. Keep refrigerated. Makes a great breakfast food for kids.

Frozen bananas make a great dessert.

Servings: 4-6

Carrot Ring

Beautiful colors and visual appeal set this vegetable dish apart!

2 C grated carrots
1 Tbsp grated onion
1 C skim milk
1 tsp granulated sugar
1 tsp salt
2 Tbsp margarine
2 Tbsp flour
3 eggs
1/4 C finely-chopped fresh parsley

In a large bowl, mix all ingredients. Pour into greased ring baking mold. Set in a pan of water and place in oven. Bake at 300° F for about 1 hour or until firm.

Serving Suggestions: After turning the ring onto a platter and unmolding, put cooked, frozen green peas in the center.

Servings: 8
