Special Oatmeal

Tasty and healthful breakfast dish…oatmeal is said to lower your cholesterol!

2 1/2 C water

1/2 tsp salt
1 C rolled oats
1 ripe banana, mashed
1 lg apple, peeled and shredded
1/2 C raisins
1/4 C fine, unsweetened coconut
1 tsp vanilla extract
1/2 tsp lemon extract
1 tsp ground coriander
1/4-1/2 C pecans, (opt.)

Bring water to a boil, add salt and stir in rolled oats. Cook over low heat, covered for 5 minutes. Stir in all ingredients, except pecans. Simmer, covered for 10 minutes more. If mixture thickens too much, add a little more water. Garnish with pecans, if desired.

Variation:
1 teaspoon of cinnamon may be substituted for the lemon and coriander.

Servings: 4

No Bean Minestrone

For those who like the taste of minestrone soup but wish to avoid the beans–try this recipe.

2-3 Tbsp extra virgin olive oil

1 lg onion, diced
3-4 cloves garlic, minced
2 stalks celery with leaves, diced
2 carrots, peeled and sliced
2 med potatoes, peeled and diced
2 zucchini, sliced
1 lg fresh tomato, peeled and diced
1 can (16 oz) Italian tomatoes
1/4 C chopped fresh parsley
1/2 tsp each: salt, sugar, pepper, oregano, basil
1 qt stock (McKay’s seasoning)
1/2 head green cabbage, sliced fine
1 bay leaf
1 C small pasta or broken spaghetti
Parmesan cheese

Pour about 2-3 tablespoons of olive oil in large stock pot. Cook onion and garlic, celery and carrot for 5-10 minutes, Add the rest of the vegetables except spinach. Add seasoning and stock, bring to a boil then reduce heat and cover. Simmer 1 hour stirring occasionally. Add pasta last 10 minutes. When the pasta is done add spinach and cook 5 minutes. Remove bay leaf. Serve with Parmesan cheese, if desired, and crusty bread.

Servings: 6-8

Zucchini Mexicali

Savory mix of zucchini and other vegetables that can be served by themselves, or with rice or tortillas to make a main course.

2 Tbsp olive oil

1 lg carrot, shredded
1 C chopped onion
3/4 C chopped celery
1 green pepper, sliced thin strips
1/2 tsp garlic salt
1/4 tsp dried basil
1/4 tsp salt or to taste
2 lg tomatoes, cut into wedges
4 C diced zucchini, unpeeled
1/2 C mozzarella cheese
cooked rice or flour tortillas

Heat oil in large skillet. Add zucchini, carrot, onion,celery, green pepper, garlic salt, basil and cook covered over medium heat 4-6 minutes. Stir taco sauce into vegetables and cook 3-5 minutes more. Add tomatoes last 2 minutes. Sprinkle with cheese and serve over rice or wrapped in a flour tortilla.

Basic Sesame Crackers

A delicious and healthy snack for when you’re craving a salty crunch.

2 C sesame seeds, unhulled
1 C golden flax, ground
2 Tbsp olive oil
2 Tbsp yellow yeast
1/2 C poppy seeds
1 tsp salt
2 cloves garlic, minced
Dash cayenne or fresh jalapeno
Enough water to make a thin paste

Put all ingredients into a food processor and process until smooth, adding enough water to make a texture like waffle batter.

Spread 1/8″ thick on 2 non-stick cookie sheets.

Dehydrate at 115° until dry enough to flip and remove from sheet. Turn onto mesh sheet and score with pizza cutter or knife to desired size. Continue dehydrating until dry and crispy. Break apart and cool, then store in an air-tight container.

Variations: 

1) To make them more spicy, add 4-6 medium tomatoes and process with 1 fresh jalapeno and 1 Tbsp Bragg’s Aminos instead of salt. Also add 1/2 C sun-dried tomatoes and/or 2 Tbsp ground caraway seed.

2) To make them more sweet, add 1/2 C honey or agave syrup or 6 softened dates or raisins and/or 1/2 tsp cinnamon or 2-3 Tbsp maple syrup and spice of choice.

Servings: makes about 50 2×2 crackers

Wassel

A favorite holiday beverage that dates back to merry olde England!

1/2 gal apple juice

2 C pineapple juice
1 1/2 C orange juice
1/2 C lemon juice
4 whole cloves
3 inch sticks of cinnamon
sugar or honey to sweeten to taste

Mix all ingredients together in a 8 quart cooking pot. Add sugar or honey as needed. Simmer 15 to 20 minutes. Serve hot.

Servings: 10-15
