Split Pea Soup

Nothing is as filling and satisfying as a hearty soup on a cold chilly day.

2 Tbsp olive oil

2 lg potatoes, diced
3 carrots, chopped
1 onion, chopped
3 celery stocks, chopped
3 Tbsp imitation bacon bits
7 C water
2 C dried split peas
2 bay leaves
1-1/2 tsp salt

After washing and sorting split peas, place split peas in a large pot with 3 and 1/2 cups of water. Simmer over medium low heat, covered for 45 minutes or until peas are soft. If a smooth consistency in desired, once all the vegetables are soft, remove form heat and allow to cool for about 20 minutes. Pour cooled soup in blender, filling it half full and blend for 1 minute. Repeat this until all the soup has been blended. Reheat to serve.

Mom’s Macaroni and Cheese

Mom’s all-purpose comfort food!

9 C cooked macaroni
2 C grated cheddar cheese*
1 tsp salt
5 to 6 C of warm milk
2 eggs*

Cook macaroni according to instructions on package. Drain. Put macaroni and Cheddar cheese into a large oblong casserole.

In a large saucepan over medium heat, warm milk and salt. Remove from heat and whisk in eggs. Immediately pour over macaroni and cheese. Bake at 400° F for 35 to 40 minutes.

*Lite Version Substitution

2 C grated reduced fat cheddar cheese
1/2 C egg substitute

Layered Green Salad

This colorful salad would look stunning layered in a glass bowl.

1 med head iceberg lettuce, torn into bit-sized pieces
1/2 to 1 C sliced celery
1/2 C chopped red, green, or yellow pepper
1/2 C finely-chopped green onions
1 8-oz can sliced water chestnuts
1 C grated low-fat mozzarella cheese
1 10-oz pkg frozen green peas, thawed
2 C low-fat mayonnaise
2 Tbsp sugar

In a large see-through glass bowl, layer items as listed. This is not a tossed salad.

Cover with mayonnaise, leaving no cracks. sprinkle sugar over mayonnaise. Cover tightly and refrigerate overnight. Just before serving, dig into the mayonnaise a little bit.

Basic Sesame Crackers

A delicious and healthy snack for when you’re craving a salty crunch.

2 C sesame seeds, unhulled
1 C golden flax, ground
2 Tbsp olive oil
2 Tbsp yellow yeast
1/2 C poppy seeds
1 tsp salt
2 cloves garlic, minced
Dash cayenne or fresh jalapeno
Enough water to make a thin paste

Put all ingredients into a food processor and process until smooth, adding enough water to make a texture like waffle batter.

Spread 1/8″ thick on 2 non-stick cookie sheets.

Dehydrate at 115° until dry enough to flip and remove from sheet. Turn onto mesh sheet and score with pizza cutter or knife to desired size. Continue dehydrating until dry and crispy. Break apart and cool, then store in an air-tight container.

Variations: 

1) To make them more spicy, add 4-6 medium tomatoes and process with 1 fresh jalapeno and 1 Tbsp Bragg’s Aminos instead of salt. Also add 1/2 C sun-dried tomatoes and/or 2 Tbsp ground caraway seed.

2) To make them more sweet, add 1/2 C honey or agave syrup or 6 softened dates or raisins and/or 1/2 tsp cinnamon or 2-3 Tbsp maple syrup and spice of choice.

Servings: makes about 50 2×2 crackers

Stuffed Baked Apples

These would really smell wonderful in the morning, mmm…

6 lg Rome Beauty/Golden Delicious/or other baking apples

3 Tbsp raisins
2 Tbsp chopped walnuts or other nuts
1 Tbsp dates, chopped
1/4 C honey or brown sugar
1 tsp ground coriander
1 Tbsp lemon juice
water to cover bottom of baking pan, 1/4 inch deep

Wash and core apples, peel or slit around center. Place in deep baking dish. Mix raisins, walnuts, and dates. Place a tablespoon of mixture in the center of each apple. Mix honey, coriander and lemon juice. Pour a teaspoon into each center of each apple. Mix a cup of water with the rest of the honey mixture and pour over apples. Pour more water over apples to form a 1/4 inch deep layer of water in pan. Cover with lid or foil. Bake at 375° until tender when pierced with a fork (about 45 minutes). Serve hot or at room temperature. May topped with 2 tablespoons of yogurt or cream.
