Raspberry Poke Cake

A pretty color and raspberry taste enhances this cake.

1 pkg white cake mix
1 1/3 C water
 2 eggs (or 1/2 C egg substitute)
1/3 C applesauce
1 3-oz pkg raspberry Jell-O
1 C boiling water
1/2 C cold water
 1 8-oz container Cool Whip, thawed

Prepare cake mix as package directs using water, eggs, and applesauce. Pour mixture into greased 9″ x 13″ cake pan. Bake at 350° F for 30 minutes or until toothpick inserted into center of cake comes out clean. Cool. Using a large fork, poke the cake at 1/2″ intervals.

In a medium bowl, dissolve gelatin in boiling water. Add cold water. Slowly pour gelatin over cake, filling holes left by fork. Chill in refrigerator until gelatin is set. Frost with Cool Whip. Keep refrigerated till ready to serve.

Whole Wheat Pumpkin Bread

A different version of pumpkin bread that incorporates wheat flour with cornmeal.

2 1/2 C whole wheat flour

1/2 C finely ground corn meal
2 tsp baking soda
1 tsp ground cloves
1/2 tsp ground cinnamon
1/2 tsp salt
2/3 C butter at room temperature
2 C sugar
2 C canned pumpkin
4 eggs
2/3 C water
1 C raisins
1/2 C chopped nuts

Stir together flour, cornmeal, baking soda, salt, and spices. Set aside. Blend butter and sugar together. Beat in the pumpkin, eggs and water. Add dry ingredients and beat until just blended. Pour batter into 2 greased loaf pans and bake for 1 hour at 350°. Let cool in pan for 10 minutes, then turn on wire rack to cool completely.

Servings: 2 loaves

Stuffed Baked Apples

These would really smell wonderful in the morning, mmm…

6 lg Rome Beauty/Golden Delicious/or other baking apples

3 Tbsp raisins
2 Tbsp chopped walnuts or other nuts
1 Tbsp dates, chopped
1/4 C honey or brown sugar
1 tsp ground coriander
1 Tbsp lemon juice
water to cover bottom of baking pan, 1/4 inch deep

Wash and core apples, peel or slit around center. Place in deep baking dish. Mix raisins, walnuts, and dates. Place a tablespoon of mixture in the center of each apple. Mix honey, coriander and lemon juice. Pour a teaspoon into each center of each apple. Mix a cup of water with the rest of the honey mixture and pour over apples. Pour more water over apples to form a 1/4 inch deep layer of water in pan. Cover with lid or foil. Bake at 375° until tender when pierced with a fork (about 45 minutes). Serve hot or at room temperature. May topped with 2 tablespoons of yogurt or cream.

Instant Mandarin Orange Salad

Could also be used as a light and cool dessert. The citrus flavors would be soothing on a hot day!

1 pint cottage cheese

2 sm cans mandarin oranges, drained
1 lg can (20 oz) crushed pineapple, drained
1 box (6 oz) lemon jello
1 box (6 oz) orange jello
1 pint Cool Whip (8 oz)

Mix all ingredients together in a large serving bowl. Fold in Cool Whip until mixed well. Chill for 30 minutes. Keep refrigerated until ready to serve.

Whole Wheat Buns

This is a wonderful addition to nearly any meal that nicely rounds out the menu.

2 Tbsp yeast

3/4 C water, very warm
3 eggs
3/4 C sugar or splenda
3 C milk or soy milk
3/4 C olive oil
1 tsp salt
3 C whole wheat flour
3 C white flour

Add yeast to water. Beat eggs and sugar together. Heat milk to scalding. Mix together milk, sugar and egg mixture, oil, salt and flour. Add yeast to this mixture. Add enough flour to mixture to make a soft dough and knead dough. Let rise for 1 hour. Punch down and form in rolls of desired size. Let rise again approximately 30-50 minutes. Bake buns 10-15 minutes at 400°.

Servings: 30-50 buns
