Swedish Meatballs

Enjoy this classic dish when you are looking for a great potluck recipe or for even a special occasion.

2-3 medium potatoes

20 oz can Vegeburger
4 eggs
1/4 tsp salt
1/4 tsp garlic
1/4 tsp onion salt
1/4 tsp seasoned salt
1/4 C bread crumbs
3 Tbsp cream or canned milk

Sauce:
1 can of mushroom soup
1 C of sour cream

Grate potatoes and place into a cloth and squeeze out excess moisture.
Mix potatoes with all other ingredients. Form mixture into balls and roll in bread crumbs. Fry balls in a deep fat fryer or in a skillet with a lot of oil until done. Set aside. Mix together mushroom soup and sour cream. Place balls in bottom of casserole dish and top with mushroom sauce. Bake at 350° for 30 minutes.

Servings: 6-8

Alfredo Sauce

Enjoy this classic Italian sauce tonight on your pasta of choice…lower fat version is included as well.

1/4  C margarine
2 Tbsp dried sweet basil
2 Tbsp dried parsley
1 8-oz pkg cream cheese, softened
1/4 C olive oil
1/3 C grated Parmesan cheese
2 cloves garlic, minced

In a medium saucepan, melt margarine. Add herbs. Add cream cheese, stirring occasionally until melted. Add olive oil, garlic, and Parmesan and blend well. Remove from heat before sauce comes to a boil. Serve hot.

Healthy Choice

2 Tbsp margarine
2 Tbsp flour
1/4 tsp salt
1 C skim milk
2 Tbsp dried sweet basil
2 Tbsp dried parsley
1 8-oz package far-free cream cheese, softened
2 cloves garlic, minced

In a medium saucepan, melt margarine. Add flour and salt and stir. Add milk and stir mixture until thickened. Add fat-free cream cheese, herbs, and garlic. Stir until cream cheese melts. Serve hot.

Serving Suggestion: Serve over any kind of pasta. Especially good on angel hair and linguine.

Servings: 2 cups (approximately 6 serving)

Stuffed Shells

Non-dairy stuffed shells that are easy to prepare. As an added bonus, any leftover stuffing mix can be used for a dip with fresh vegetables.

3 C extra firm tofu

2 C soy mayonnaise
2 tsp basil
2 tsp oregano
2 tsp onion powder
1 tsp garlic powder
1 tsp salt
4 C spaghetti sauce
non-dairy Parmesan cheese, optional 

Mix first 7 ingredients well. Stuff the shells. Layer 1 cup of spaghetti sauce on bottom of 9 by 13 dish. Place stuffed noodles, open side down on the sauce. Pour sauce over the top. Bake at 350°. Dribble soy cheese or other cream over top after baking for 45 minutes then return to oven for 15 more minutes. Garnish top with non-dairy Parmesan cheese if desired.

Servings: Approximately 28 shells

Peaches and Cream Pie

Fluffy as a cloud, this delicious dessert makes a pretty presentation.

3/4 C flour

1/2 tsp salt
1 tsp baking powder
1-(3.2 oz) pkg cook and serve vanilla pudding mix
3 Tbsp butter, softened
1 egg
1/2 C milk
1- 29 oz can slice peaches, drained (reserve liquid) or
2 1/2 C sliced fresh peaches in 1/4 C sugar
1- 8 oz pkg cream cheese, softened
1/2 C sugar
1 tsp cinnamon

Preheat oven to 350°. Grease sides and bottoms of 10 inch deep pie pan. In a medium bowl, mix together flour, salt, baking powder and pudding mix. Mix in butter, egg and milk and beat 2 minutes. Pour into pie pan. Arrange peach slices on top of pudding mixture. In a small bowl, beat cream cheese until fluffy. Add 1/2 cup of sugar and 3 tablespoons of peach syrup and beat for 2 minutes. Spoon over peaches to within 1 inch of pan edge. Mix sugar and cinnamon and sprinkle over top. Bake for 30 to 35 minutes.

Better Mustard

If you are trying to avoid vinegar in your condiments, here’s a replacement for regular mustard.

1 C lemon juice

1 clove garlic
1/2 tsp salt
2 tsp turmeric
1/4 C flour
1/3 C oil

Blend lemon juice, turmeric and salt. Cook until thick. Cool for 10 minutes. Blend garlic with mixture. Add the oil slowly until smooth and well blended.
