Lasanga Florentine

Lovely mix of cheeses, sauce, noodles and spinach. 4 oz lasangna noodles 1-10 oz pkg frozen chopped spinach 2 eggs or equivalent egg beaters 1 C cottage cheese 1 pkg  green onion dip mix 1 Tbsp minced parsley 2 C spaghetti sauce 1-8 oz pkg of Mozarella cheese 1/4 C grated Parmesan cheese 1/2 tsp salt, if desired Cook noodles and drain.Thaw and drain spinach thoroughly. Cover pan with thin layer of sauce.

The Ultimate Whole Wheat Pancake

Need a whole grain, stick to your ribs breakfast?  These hearty pancakes will do the trick! 3 eggs 2 C milk- soy or dairy 1/8-1/2 C oil (may use more or less as desired) 1 Tbsp brown sugar 1 tsp salt 2 C whole wheat flour 1-2 tsp baking soda Blend eggs, milk, oil, brown sugar and salt in blender until frothy for about 3 minutes. Pour into bowl and add whole wheat flour and baking soda. Mix the batter by hand. Fry in lightly oiled skillet or on griddle.

Oatmeal-Wheat Germ Crackers

Wonderful crackers to make for a healthful snack, to go with soup or whatever… 3 C quick oatmeal 2 C unbleached white flour 1 C wheat germ (raw or toasted) 3 Tbsp granulated sugar 1 tsp salt 3/4 C canola oil 1 C water Sesame or poppy seeds (optional) In a large bowl, combine quick oats, flour, wheat germ, sugar and salt.

Fresh Vegetable Soup

Fresh and lovely, you could serve this soup tonight and freeze some for later! 3 Tbsp butter or margarine 1 med onion, chopped 1 lg stalk celery with leaves 1 lg carrot, sliced 1 lg potato, peeled and diced 1 lg tomato, peeled and diced 3 Tbsp fresh basil, chopped 1 qt stock (McKay’s seasoning) 2 sm zucchini, sliced 1/2 head cauliflower (break into bite size florets) 1 tsp Lawry’s seasoning salt 1 tsp pepper, optional 1 C peas (fresh or frozen) Parmesan cheese, optional Melt butter or margarine in large stockpot.

Italian Bread Ring

Mama Mia! You must make this flavorful ring shaped bread soon! 2 Tbsp sesame seeds 4 l/2 to 5 1/4 C unbleached white flour 1/4 C granulated sugar 1 1/2 tsp salt 2 pkg active dry yeast 1 C water 1 C skim milk 1/3 C margarine 2 eggs (optional) Filling: 1 C grated mozzarella cheese 1/2 tsp Italian seasoning 1/4 tsp garlic powder 1/4 C margarine Generously grease a 10″ Bundt pan and sprinkle with sesame seeds.
