Easy Sweet Sour

Here’s a simple recipe for a sweet and sour sauce that takes only a few minutes to create!

1 C reduced-calorie apricot spread
1 Tbsp vinegar (or lemon juice)
1 Tbsp lemon juice concentrate
1 tsp soy sauce

In a medium glass bowl, combine ingredients. Microwave on high for 5 minutes.

Serving suggestion: This sauce can be used for any sweet and sour entree or vegetable.

Servings: 1

Eggplant Patties

Think outside the box–use these savory patties in sandwiches.

1 Tbsp canola oil
1/2 C finely-chopped onion
2 C cubed eggplant
1/2 C cracker crumbs
1/2 tsp salt
1 Tbsp finely-chopped green pepper
1/2 C old-fashioned rolled oats

In a small skillet, saute onion in oil. Set aside.

In a medium saucepan, boil eggplant in a small amount of water until tender. Drain.

In a medium bowl, mix eggplant, onion, and the rest of the ingredients. Form into small patties and brown on both sides in small amount of oil.

Servings: 6 Patties

Wheat Berry Rice Patties

Here’s another good recipe for those learning to cook that combines the ease of cooking with whole grain wheat and rice.

1/2 C red cereal wheat berries

1 C rice
1 onion, chopped
2 1/2 tsp Mrs. McKay’s chicken like seasoning, to taste
2-3 eggs

In a quart sauce pan cover wheat berries with water. Place lid on pan and cook berries until they begin to pop, about 45 minutes. Cook rice as directed.

Saute onion in small amount of butter or margarine. Combine cooked rice and wheat berries with onions and seasonings. Add eggs, one at a time until the mixture is the right consistency to form into patties. Drop by tablespoons onto a medium hot skillet sprayed with non-stick spray. Oil may be used if desired. Cook until golden brown. Serve immediately.

Servings: 8-10

Carob Rice Treats

A wonderful replacement for an old fashioned treat for the whole family.

4 C your favorite carob chips
1 C peanut butter
3/4 C crispy brown rice cereal

Combine carob chips and peanut buttter in a saucepan and heat on mediuim low until melted. When melted add brown rice cereal, mixing well. Pack firmly into a vegetable-sprayed baking dish. Refrigerate until mixture hardens. Cut into bars and serve. Store in refrigerator.

Servings: 1 1/2 dozen bars

Vegetarian Chili Tamale Casserole

Tasty casserole that uses a few prepared ingredients to speed up cooking time.

3 20-oz cans Natural Touch Spicy Chili
2 12-oz cans whole kernel corn, drained
1 lg green pepper, chopped
2 Tbsp chili powder
1 tsp garlic powder
1/2 tsp ground cumin
1 C ketchup

Crust:

1 16-oz can Marie Callender’s Corn Bread Mix
1 1/2 C water

In a large saucepan over medium-high heat, combine chili, corn, pepper, seasonings, and ketchup. Cook until hot, stirring often.

Spray a 9″ x 13″ baking dish with vegetable spray. Pour chili mixture into baking dish.

Prepare corn bread mix according to package directions. Drop by spoonfuls on top of casserole. Mixture spreads so do not try to cover casserole completely. Bake in 400° F oven for 25 to 30 minutes or until crust is golden brown.

Servings: 20
