Blender-Grated Potato Casserole

A creative time saver that uses your blender to prepare this dish.

1 C 1% low-fat milk*
3 eggs*
1 1/2 tsp salt
1 C cubed cheddar cheese*
1 Tbsp dried parsley
1 sm onion, quartered
4 med potatoes, cubed

Put ingredients in blender in order listed. Cover blender and run on high just until potatoes are bit-sized pieces. Pour mixture into a lightly greased casserole dish. Bake at 350° F for 1 hour.

*Lite Version Substitution

1 C skim milk
3/4 C egg substitute
1 C cubed reduced fat cheddar cheese

Overnite Fruit Salad

A delicious fruit salad that is made in advance. Great idea for potlucks, brunches, or as a side salad at lunch or dinner.

1-20 oz can pineapple chunks

1/2 C sugar
2 Tbsp cornstarch
1 Tbsp lemon juice
1 orange (skin only)
1 large red apple
1 large yellow apple
1 banana
1 C seedless grapes, green or red
1-11 oz can Mandarin oranges

Drain pineapple, reserving juice. Combine pineapple juice, sugar, cornstarch and lemon juice in a 2 quart sauce pan. Grate skin of 1 orange and add rind gratings to sauce pan. Cook over medium heat, stirring constantly. Set aside.

Core and dice apples. Slice banana, remove grapes from stems, drain mandarin oranges. Combine all fruit in a 3 quart large glass bowl. Pour hot glaze over fruit, toss gently.

Peanut Butter Pie

If you are pressed for time and need an easy recipe, this rich and creamy pie may be for you.

1 C powdered sugar
1 C peanut butter
1-8 oz pkg cream cheese
1-8 oz pkg Cool Whip
20 mini Reece’s Cups,chopped
1chocolate or Oreo crust

Cream sugar, peanut butter and cream cheese together. Fold in Cool Whip. Fold in Reece’s Cups. Pour into crust. Refrigerate 2 or 3 hours or overnight before serving.

Servings: 6-8

Special Vegeburgers

Innovative use of ingredients make a great fake burger.

1 C dry vegeburger granules

1 C or more, hot water
1 C falafel mix, optional
2 Tbsp Bragg’s Liquid Aminos or soy sauce
2 Tbsp flour
1 C oatmeal
1 egg
2 Tbsp nutritional yeast
2 tsp sage
2 tsp Italian seasoning
1/2 tsp garlic powder
1 C ground nuts and/or 1 C chopped onions

Mix dry vegeburger and hot water and falafel mix. (If using falafel mix you will need more water) Let stand 5 minutes. Add remaining ingredients, adding oatmeal first, stirring thoroughly. Heat frying pan with oil. Form into patties and fry. Can serve on buns like a vegeburger or just plain.

Servings: 4-6

I don’t remember ever seeing so much interest in such a little book! And I don’t believe it’s because the book is free. I am convicted there is a deep soul hunger and thirst in my faith community for something Jesus called “the baptism of the Holy Spirit” (Acts 1:5). How else can you explain why Helmut Haubeil’s short book, Steps to Personal Revival: Being Filled with the Holy Spirit , was downloaded over 1,000 times last week?
