Cherry Delight Fruit Smoothie

Either as a creamy and fruity smoothie or as a soft serve “ice cream,” this is a great way to enjoy a low fat, sugar free and cholesterol free treat.

1 C frozen cherries, thawed until soft

1 to 2 C of frozen bananas, slightly thawed
Optional liquid (soy or nut milk, juice) for blending

Blend cherries until smooth, beginning on low and increasing to high speed. continue blending banana chunks until smoothie thickens to desired consistency. Any liquid (juice, soy or other milks) can be added if desired as long as the proportion of soft ingredients in adequate for blending.

Pour into cups and serve immediately or chill in freezer for 20 to 40 minutes to enjoy a soft serve “ice cream.”

Servings: 2-3

Spaghetti Salad

Creative salad that is easy to prepare. Customize the salad by your choice of vegetables.

1 pkg spaghetti

1 bottle of Wishbone Italian Dressing
3/4 C of Salad Supreme spice
Dice, as desired: purple onions, green peppers, cherry tomatoes, fresh mushrooms, celery

Boil spaghetti as directed on package. Rinse well. Chop spaghetti into 2-3 inch lengths. Mix together all other ingredients. Let marinate over night for best results.

Soybean Patties

Try this wholesome vegetarian pattie with a side of your favorite marinara sauce.

2/3 c dry soybeans

1 1/4 C water
1 1/3 C rolled oats
1 tsp onion powder
1 tsp Italian seasoning
2 Tbsp soy sauce
1/2 tsp salt
non-stick spray or olive oil for frying

Cover dry soybeans with water (approximately 1 quart) and soak overnight. Puree soaked soybeans in food processor or blender with 1 1/4 cups of water. Combine remaining ingredients with puree. Let stand for 20-30 minutes.

Heat skillet to medium hot using non-stick spray or olive oil. Drop soybean mixture by a tablespoons into hot skillet shaping into patties of desired size. Fry 5-10 minutes on each side or until golden brown.

Servings: 10-12

Russian Bean Salad

Delicious and nutritious medley of flavors, textures and colors.

1 can wax beans

1 can green beans
1 can kidney beans
1 can garbanzo beans
3-4 green onions, chopped
1/2 bell pepper, chopped
1/2 C sugar
1/3 C olive oil
1/3 C lemon juice
garlic salt to taste

In large bowl mix together all beans, green onions, and green peppers. In a separate bowl mix together sugar, oil and lemon juice. Pour mixture over other ingredients and mix. Add garlic salt to taste.

Eyes Wide Open

“Unless you change and become like little children, you will never enter the kingdom of heaven” (Matthew 18:3, The Voice). 

It’s sad how as adults we have lost the awe and wonder of the simple things in life. Several years ago, during the Christmas season, I saw a little girl pick up a Christmas gift bag from under our office tree, hold it up to her ear and shake it, desperately trying to see through the decorated paper bag, a look of curiosity and anticipation on her little face. It struck me how, as we grow up, we lose the ability to be surprised, to become excited over something small.

It’s no wonder Christ said we must become “as little children.” Children take on their world with eyes wide open, arms flung out, blissfully headlong into each moment of each day. They wake up and hit the ground running. God wants us to have that zest and zeal for life, the joy of anticipating a new day, a new adventure.

This Christmas, we should remember that every day of our life is a gift–a gift from God! And we should “unwrap” each one of them with the delight and appreciation of a little child!
