Russian Bean Salad

Delicious and nutritious medley of flavors, textures and colors.

1 can wax beans

1 can green beans
1 can kidney beans
1 can garbanzo beans
3-4 green onions, chopped
1/2 bell pepper, chopped
1/2 C sugar
1/3 C olive oil
1/3 C lemon juice
garlic salt to taste

In large bowl mix together all beans, green onions, and green peppers. In a separate bowl mix together sugar, oil and lemon juice. Pour mixture over other ingredients and mix. Add garlic salt to taste.

Eyes Wide Open

“Unless you change and become like little children, you will never enter the kingdom of heaven” (Matthew 18:3, The Voice). 

It’s sad how as adults we have lost the awe and wonder of the simple things in life. Several years ago, during the Christmas season, I saw a little girl pick up a Christmas gift bag from under our office tree, hold it up to her ear and shake it, desperately trying to see through the decorated paper bag, a look of curiosity and anticipation on her little face. It struck me how, as we grow up, we lose the ability to be surprised, to become excited over something small.

It’s no wonder Christ said we must become “as little children.” Children take on their world with eyes wide open, arms flung out, blissfully headlong into each moment of each day. They wake up and hit the ground running. God wants us to have that zest and zeal for life, the joy of anticipating a new day, a new adventure.

This Christmas, we should remember that every day of our life is a gift–a gift from God! And we should “unwrap” each one of them with the delight and appreciation of a little child!

Non-Dairy Cheese Sauce

Can’t use dairy products or trying to use less? Try this versatile recipe in many of your cooking projects.

1/2 C raw cashews, rinsed

1 C hot water
1 C cooked cornmeal ( 1/4 C cornmeal to 1C water)
1-3 Tbsp nutritional yeast flakes
1 Tbsp chicken style seasoning (opt.)
1/4 tsp garlic powder
1/2 tsp onion powder
1 Tbsp lemon juice
1 tsp salt
1 Tbsp lemon juice
2- 4 oz pimentos in jar

Cook 1/4 cup of cornmeal in 1 cup of water, stirring until lumps are disolved.  Simmer until thick. Blend cashews in water until very smooth. Add hot cooked cornmeal and continue blending. Add seasonings, pimentos and blend until smooth.

Use this sauce in place of cheese. Can be used over baked potatoes, in Mexican food, lasanga, pizza, etc. Yummy!

Sarah’s Favorite BBQ Hot Dogs

Kids will love this recipe and could help to prepare it too!

1/2 stick butter

1 can Worthington Super Links
1 C chopped mushrooms
1 onion, chopped
dash of salt, pepper, Marten’s Nature Seasoning
1 heaping Tbsp chopped garlic
honey BBQ sauce

Melt 1 tablespoon of butter in frying pan. Saute onion and mushrooms. Add 2 more tablespoons of butter, slice hot dogs in circles (rounds) and add to frying pans. Cook on medium heat until browned slightly. Add garlic and 1 tablespoon of butter stirring frequently. Add seasoning. Place in casserole dish. Generously drizzle with BBQ sauce broil until bubbly.

Servings: 4

Tangy Fresh Cranberry Relish

Fresh and juicy salad that can also double as a sweet relish.

3 C fresh or frozen cranberries

2 Golden Delicious apples
1 orange
2 Tbsp honey
1/2 C apple juice concentrate
1/2 C orange juice concentrate
1 C chopped dates
2 Tbsp fresh orange peel
1 Tbsp fresh lemon peel

Before peeling orange, grate the 2 tablespoons of orange peel. Peel orange. Chop cranberries, apples and orange in a food processor. Place in a bowl. Add remaining ingredients and blend well. Refrigerate until thoroughly chilled.

Note:
You may make orange or lemon peel ahead of time by removing peel and blending or processing until chopped finely. Place peel in an air tight container and store in freezer.

Servings: 6-8
