Lima Bean Salad

These are not the lima beans you remember as a child. They are tasty, as well as nutritious. Try it soon!

2 10-oz packages frozen Lima beans
1 medium bunch celery, sliced
2 16-oz cans sliced black olives, drained
1 large bottle Italian salad dressing
(Reduced-calorie dressing works very well.)
Garlic powder (to taste)
Ground oregano (to taste)
1 lg white onion, sliced

Cook Lima beans according to package directions. Drain. While still warm, mix Lima beans with celery, olives, and salad dressing. Season to taste with garlic powder and oregano. Garnish salad with sliced onions. Marinate overnight in refrigerator until ready to serve.

Servings: 8

Mock Turkey Roast I

Wonderful mock turkey roast that could be used for holiday entertaining or for just anytime.

1 20-oz can Worthington Vegetable Skallops, ground
1 medium onion, finely chopped
2 C Pepperidge Farm Herb Stuffing, finely ground
1/4 C canola oil
3 eggs*
1 C milk*
1 C grated cheddar cheese*
1 Tbsp dried sweet basil

In a large bowl, mix together all ingredients. Pour into a greased 9″ x 13″ baking dish. Bake at 350° F for one hour.

*Lite Version Substitution

3/4 C egg substitute
1 C skim milk
1 C grated low-fat cheddar cheese

Oatmeal Cake with Coconut Frosting

Here’s a wonderful cake that’s topped with snowy white coconut frosting.

1 1/4 C boiling water
1 C old-fashioned rolled oats
1 C brown sugar
1 C granulated sugar
1 1/3 C unbleached white flour
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp baking soda
2 eggs (or 1/2 C egg substitute)
1/2 C margarine

Coconut frosting:

5 Tbsp margarine
1 C chopped walnuts
1/2 C brown sugar
1/4 C evaporated skim milk
1/2 tsp vanilla extract
1 C grated coconut

In a large bowl, pour boiling water over oatmeal. Let stand 20 minutes. Add other cake ingredients and mix well. Pour into greased 9″ x 13″ cake pan. Bake cake at 350° F for 45 minutes or until toothpick inserted into center of cake comes out clean.

In a small saucepan over medium heat, melt 6 Tbsp margarine. Add other frosting ingredients and warm until sugar dissolves. Remove from heat. Spread over cake while still warm. Serve warm. This can be reheated in oven or microwave before serving.

Tomato Gravy

Here’s a savory sauce that could grace patties or other entrees.

1/4 C margarine
2 Tbsp diced onion
1/4 C unbleached white flour
2 C tomato juice
1 tsp celery salt
1 tsp salt

In a medium skillet, saute onion in margarine until tender. Blend in flour and seasonings. Slowly add tomato juice and mix with a wire whisk. Bring to a simmer. Simmer 5 minutes.

Serving Suggestions: Great over toasts or patties.

Servings: 2 1/2 cups

Garden Patch Potato Salad

Makes a pretty appearance on a bed of lettuce…can be made in “lite” as well. 8 C cooked, peeled, and cubed potatoes

2 C chopped fresh zucchini
1 C thinly sliced celery
3/4 C grated carrots
3 Tbsp finely-chopped onion
2 C sour cream (lite sour cream can be substituted)
2 Tbsp vinegar or lemon juice
1 Tbsp granulated sugar
1 tsp salt
1/2 teaspoon dill weed
1/4 tsp celery salt

In a large bowl, combine cubed potatoes, zucchini, celery, carrots, and onion. Toss together lightly. Set aside.

In a small bowl, combine remaining ingredients. Mix well. Add to vegetables and mix lightly. Chill in refrigerator until ready to serve.

Serving suggestions: If you want to make this special, you can pour the salad into a lightly greased 3-qt bowl, or mold and chill. When ready to serve, invert onto a bed of  leaf  lettuce and garnish.
