Reeses Dream Pie

This delectable “faux” dairy free recipe gives the option of being made with carob or chocolate.

1- 12 to 14 oz tub of silken or firm tofu

1 C soy milk
1 tsp pure vanilla
1 Tbsp carob powder or cocoa
1 Tbsp arrowroot or cornstarch
1 Tbsp unbleached flour
1/8 tsp sea salt
1 C of sweetener of choice
1 C natural peanut butter
1 C carob chips or chocolate chips
prepared crust for a 10 inch pie

Drain and paper towel the tofu gently. Place all ingredients except peanut butter and chips in a blender of food processor until smooth. Gradually add peanut butter. Add chips until they are completely ground up. Pour filling into your favorite pie crust and bake at 350° for 20 to 30 minutes. Cool to room temperature then refrigerate for an hour or two before serving.

Servings: 6-8

Mom’s Macaroni and Cheese

Mom’s all-purpose comfort food!

9 C cooked macaroni
2 C grated cheddar cheese*
1 tsp salt
5 to 6 C of warm milk
2 eggs*

Cook macaroni according to instructions on package. Drain. Put macaroni and Cheddar cheese into a large oblong casserole.

In a large saucepan over medium heat, warm milk and salt. Remove from heat and whisk in eggs. Immediately pour over macaroni and cheese. Bake at 400° F for 35 to 40 minutes.

*Lite Version Substitution

2 C grated reduced fat cheddar cheese
1/2 C egg substitute

Basic Sesame Crackers

A delicious and healthy snack for when you’re craving a salty crunch.

2 C sesame seeds, unhulled
1 C golden flax, ground
2 Tbsp olive oil
2 Tbsp yellow yeast
1/2 C poppy seeds
1 tsp salt
2 cloves garlic, minced
Dash cayenne or fresh jalapeno
Enough water to make a thin paste

Put all ingredients into a food processor and process until smooth, adding enough water to make a texture like waffle batter.

Spread 1/8″ thick on 2 non-stick cookie sheets.

Dehydrate at 115° until dry enough to flip and remove from sheet. Turn onto mesh sheet and score with pizza cutter or knife to desired size. Continue dehydrating until dry and crispy. Break apart and cool, then store in an air-tight container.

Variations: 

1) To make them more spicy, add 4-6 medium tomatoes and process with 1 fresh jalapeno and 1 Tbsp Bragg’s Aminos instead of salt. Also add 1/2 C sun-dried tomatoes and/or 2 Tbsp ground caraway seed.

2) To make them more sweet, add 1/2 C honey or agave syrup or 6 softened dates or raisins and/or 1/2 tsp cinnamon or 2-3 Tbsp maple syrup and spice of choice.

Servings: makes about 50 2×2 crackers

Raspberry Poke Cake

A pretty color and raspberry taste enhances this cake.

1 pkg white cake mix
1 1/3 C water
 2 eggs (or 1/2 C egg substitute)
1/3 C applesauce
1 3-oz pkg raspberry Jell-O
1 C boiling water
1/2 C cold water
 1 8-oz container Cool Whip, thawed

Prepare cake mix as package directs using water, eggs, and applesauce. Pour mixture into greased 9″ x 13″ cake pan. Bake at 350° F for 30 minutes or until toothpick inserted into center of cake comes out clean. Cool. Using a large fork, poke the cake at 1/2″ intervals.

In a medium bowl, dissolve gelatin in boiling water. Add cold water. Slowly pour gelatin over cake, filling holes left by fork. Chill in refrigerator until gelatin is set. Frost with Cool Whip. Keep refrigerated till ready to serve.

Potato Kale Soup

A simple and nutritious soup that’s great in the fall or winter.

4 tsp olive oil
1 med onion, chopped
3 cloves of garlic, minced
3 med potatoes, cubed
4 C water
1/2 lb kale, chopped

Saute onion and garlic in olive oil. Add potatoes and water, simmer until potatoes are firm. Add chopped kale. Simmer 15 minutes.

Servings: 4-6
