Granola

Good basic recipe for the ever popular breakfast food – granola.

10 C old fashioned oatmeal

1 1/3 C sesame seed
1 3/4 C pumpkin seed
1 1/3 C sunflower seeds
1 C pecans, chopped
1 C walnuts, chopped
1 C silvered almonds
1 1/2 C brown sugar
1 1/2 tsp salt
1 1/2 Tbsp water
1 1/2 C olive oil
1 Tbsp vanilla
1 Tbsp maple flavoring

Mix dry ingredients thoroughly. Mix all other ingredients and blend with dry ingredients. Mix well. Bake at 150° overnight or 250° about 2 hours. Stir about 4 times during  a 2 hour baking process.

Servings: 40-50 (1/2 cups)

Graham Biscuits

Unique biscuit recipe that uses graham cracker crumbs which would give the biscuits a different color and sweeter taste.

1 C all purpose flour

1/2 C whole wheat flour
1 C graham cracker crumbs
2 Tbsp white sugar
1 tsp salt
4 tsp baking powder
1/2 tsp cream of tartar
1/4 C margarine
1 C soy milk

Put first 7 ingredients into bowl. Stir thoroughly. Cut in margarine until crumbly. Pour in milk. Stir in quickly to combine. Dough should be soft. Turn out on a lightly floured surface. Knead gently 8 -10 times. Roll or pat 1/2 – 3/4 inches thick. Cut with small round cookie cutter. Place on greased cookie sheet and bake at 450° for 12 -15 minutes.

Servings: 12-14

Mushroom Paté

A tasty spread that makes a terrific alternative to traditional meat-based paté. Excellent for topping crackers or spreading on bread, or as a veggie dip. 

1 C mushrooms, button or portabellas
1 C walnuts, soaked and rinsed
1 clove garlic
1 Tbsp Red Miso
3 Tbsp olive oil

Put all ingredients into a food processor and process until smooth. Adjust flavors to suit taste.

Slice zucchini, yellow squash or jicama in thin rings and apply a dollop of paté on top. Makes a lovely hors d’oeuvres tray on a bed of red tip lettuce.

Servings: 1 1/2 cups

Old Fashioned Gingerbread Cake

With the option of making spicy cake fat free, how could you go wrong?

2 1/2 C unbleached white flour
1 1/2 tsp baking soda
1 tsp ground ginger
3/4 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp salt
1/2 C shortening*
1/2 C granulated sugar
1 C molasses
1 egg (or 1/4 C egg substitute)
1 C cold water

In a large bowl, combine all dry ingredients. Set aside.

In a medium bowl, combine shortening, molasses, egg, and water. Pour all at once into dry ingredients. Mix together either by hand or electric mixer until thoroughly combined. Pour into greased 9″ x 12″ cake pan. Bake at 350° F for 30 minutes or until a toothpick inserted into center of cake comes out clean. Serve warm with a whipped topping.

*1/4 Prune Whip can be substituted. This dessert will then be fat-free.

Strokes Among Youth

Here in the United States Heart Disease is the number one killer. Usually we think of this as a problem that happens among older adults. And this is true to a certain extent. Generally, the risk continually increases after the age of 45. Women are naturally protected by hormones until they face menopause; then the risk increases.

New research is showing that heart disease is gradually creeping down the age line and affecting teenagers and young adults. Researchers reviewed data taken from hospitals during 1995 – 2008. While the number of strokes for the older population has decreased, the number of acute ischemic strokes (brain blood supply decreases or stops) rose among youth except for girls aged 5 – 14 years old. The largest number of these strokes took place with males, aged 5 – 14 years; a 51.6 percent increase. Males aged 15 to 34 years experienced a 45.6 percent increase.1 Those who experienced stroke had an additional risk factor. Almost one third of the 15-34 years old had high blood pressure.2

With these types of changes in health, young adults, teens and parents of children should re-examine their lifestyles and make changes to support good health. What can be done to protect the heart and blood vessels?

• Add fruits and vegetables to the diet. These foods offer natural ingredients that protect the heart and blood vessels and helps maintain healthy lifestyles.

• Increase fiber intake. Fruits, vegetables, beans, legumes and whole grain foods such as brown rice, whole wheat bread and oatmeal provide a generous supply of fiber. It is recommended that teens and adults should get 25 – 36 grams of fiber a day. The Institute of Medicine recommends that for every 1,000 calories consumed, both children and adults should get 14 grams.

• Regular physical activity is recommended. Adults should get a minimum of 30 minutes a day and children should get a minimum of 60 minutes a day. Walking, swimming and biking are great activities to get moving.

• Choose fats and oils that are low in saturated fats and high in monounsaturated fats. Omega-3 fatty acids are also helpful in maintaining good health. Foods such as flax seed and salmon help us maintain a steady supply.

• Eat less refined products and avoid smoking and tobacco smoke.

Make it a goal to keep everyone in the family heart healthy!
