Carob Rice Treats

A wonderful replacement for an old fashioned treat for the whole family.

4 C your favorite carob chips
1 C peanut butter
3/4 C crispy brown rice cereal

Combine carob chips and peanut buttter in a saucepan and heat on mediuim low until melted. When melted add brown rice cereal, mixing well. Pack firmly into a vegetable-sprayed baking dish. Refrigerate until mixture hardens. Cut into bars and serve. Store in refrigerator.

Servings: 1 1/2 dozen bars

Apple Brown Betty

A wonderful dessert for a group and extra delicious topped a la mode!

6 C sliced apples
2 C old-fashioned rolled oats
1 C chopped walnuts
1 C whole wheat flour
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 C canola oil
1/2 C honey
2 tsp vanilla
1 tsp lemon extract

Slice peeled and cored cooking apples into a 9″ x 13″ baking dish.

In a medium bowl, mix remaining ingredients till crumbly. Cover apples with topping. Bake at 350° F until apples are tender and topping is golden brown (35 to 45 minutes). Serve warm with a scoop of ice cream.

Servings: 15

Delicious Punch

2 12-oz cans frozen white lemonade concentrate
32 oz ginger ale, chilled
2 qt frozen pineapple sherbet, softened
2 C water

In gallon container, empty frozen lemonade. Add ginger ale, softened pineapple sherbet, and water; stir. Serve over ice. If using a punch bowl, add ice after the punch is poured in.
Servings: 20

Vegetarian "Turkey Legs"

Delicious “faux” entree that will satisfy the most finicky of tastes.

2 C Hi Ho or Ritz crackers,crushed

1 C pecans, chopped
1- 20 oz can Worthington Vegetarian Burger
1 med onion, chopped
2- 10 1/2 oz cans of cream of mushroom soup
2 C cheese, grated (less if desired)
6 eggs
2 Tbsp McKay’s Chicken or Beef Style Seasoning
1/2- 1 soup can water
cooking oil

Mix cream of mushroom soup and water (be sure the mixture is not too thin). Set aside. Mix all other ingredients in large bowl. Use hands to shape mix into palm size patties no thicker than 1 inch. fry patties until browned but not completely done. Pour 1/2 cup of mushroom soup mixture in bottom of 9 by 13 dish. Place partially cooked patties in dish and cover with remaining soup mixture. Bake at 325° for at least 30 minutes.

Vegetable And Choplet Stir Fry

In the mood for something Asian-inspired? This healthy, low fat, stir fry has all the ingredients to satisfy…

1 can pineapple chunks (in own juice)

2 Tbsp lemon juice
4 Tbsp vegetable oil
2 C broccoli florets
1 med onion, cut into wedges
1 C carrots, thinly sliced
1 can choplets, sliced into 1 1/2 strips
1 med red pepper, cut into thin strips
1/4 C soy sauce
1 1/2 Tbsp cornstarch

Pre-made hot rice to serve 4-6

Drain pineapple, reserve juice. Combine juice, soy sauce, lemon juice and cornstarch. Set aside. Heat oil in uncovered wok over high heat for 2 minutes. Add sliced choplets stirring for 2 to 3 minutes or until browned. Remove choplets. Reheat remaining oil then add vegetables, stir fry for 2 to 3 minutes. Add juice mixture stirring until thickened. Stir in pineapple chunks and choplets. Cover and cook 2 minutes. Serve with hot rice.
