Tortilla Burger Casserole

Spicy and delicious…this casserole blends tasty ingredients together.

1 lg onion, chopped
1 20-oz can Worthington Low Fat Vegetarian Burger, crumbled
1 10.75-oz can tomato soup
1 15-oz can tomato sauce
1 15-oz can water
1 pkg taco seasoning
1 doz corn tortillas, torn into bite-sized pieces
1 16-oz can sliced black olives, drained
1 C grated cheddar cheese (optional)

In a large skillet over medium-high heat, water-saute* onion. Add crumbled burger, tomato soup, tomato sauce, water, taco seasoning, and black olives.

In a 9″ x 13″ baking dish, lager torn tortillas and sauce ending with cheese. Bake at 350° F until bubbly (35 to 45 minutes). Serve with a dollop of far-free sour cream, if desired. Leave off the cheese topping to cut down on calories and cholesterol.

Broccoli-Cauliflower Confetti

A simple and beautiful raw salad. Easy to prepare and serve.

1/2 C lemon juice

1 Tbsp sea salt
3-4 garlic cloves
2 Tbsp sesame oil
3/4 C olive oil
4 C cauliflower florets
1 red bell pepper, chopped fine

Combine lemon juice, garlic and salt in blender. With the blender running, pour the sesame and olive oils in a thin stream until well blended. chop broccoli and cauliflower in food processor. Put in bowl and mix with chopped red bell pepper. Mix dressing in and marinate for 1 to 2 hours.

Tofu Cheese Balls

Whether baked or fried, these high protein balls add to a healthy diet.

1 C crumbled soft tofu
1 C quick oatmeal
1 C bread crumbs
1 medium onion, minced
1/2 C egg substitute
1 tsp ground sage
1 tsp salt
Pinch of sugar

In a medium bowl. combine ingredients, mixing well. Form into balls and fry in a small amount of oil in a skillet over medium-high heat. (Or if you prefer, put balls on a lightly greased cookie sheet and bake them in the oven at 375° F for 20 to 25 minutes.) Place cooked meatballs in a 9″ x 13″ baking dish. Cover with a mixture of one can low-fat mushroom soup and one can water. Bake at 350° F for 30 minutes.

Tenderbit Casserole

Delicious casserole choice for the potato lovers in the family. Will feed a crowd.

1-19 oz can Loma Linda Tenderbits, quartered

4 lg potatoes
1 lg onion, chopped
12 oz sour cream
2-10 3/4 oz cans mushroom soup or 1 lg family size
8 oz potato chips (regular or barbecue)

Scrub and boil potatoes whole. When cooked through, let cool and remove skins and dice.
Saute tenderbits, onions, and mushrooms together and add to potatoes. Add sour cream, mushroom soup and crushed potato chips to potato mixture mixing well. Spread into a greased 9 by 13 casserole dish. Bake at 350 for 60 minutes.

Servings: 10-12

Chicken and Pear Salad

This is a simple and delicious salad that could be served on the side or if served with bread, an entree!

1/2 C poppyseed dressing

2-3 med, firm pears, thinly sliced
1 C vegetarian chicken, chopped
4 C mixture of baby spinach leaves and romaine lettuce

Mix pears, chicken and dressing. Toss lightly with greens and serve.

Servings: 4- 1 1/2 C
