Vegan Cottage Cheese

A dairy free variety of cottage cheese that can be eaten as is or used in other baking projects.

1 lb firm tofu

1 Tbsp oil
1 Tbsp apple cider vinegar
2 Tbsp lemon juice
2 Tbsp nutritional yeast, (optional)
1 1/2 Tbsp miced onion (omit for baked goods)
1 Tbsp minced chives (omit for baked goods)
2 tsp minced dill (omit for baked goods)
1/2 tsp salt free seasoning

Place half of tofu and all remaining ingredients in blender or food processor and puree. Mash remaining tofu with fork and mix by hand with puree. Makes 2 cups.

Tropical Punch

Cooling flavors of the tropics with the tartness of citrus make this a special punch.

1 46-oz can unsweetened pineapple juice, chilled
1 46-oz can orange-grapefruit juice, chilled
2 qt lemon-lime soda, chilled
1 pt frozen orrange sherbet

In large container stir together juices and lemon-lime soda. Spoon sherbet into container when ready to serve. Serve over ice.

Servings: 30

The Ultimate Whole Wheat Pancake

Need a whole grain, stick to your ribs breakfast?  These hearty pancakes will do the trick!

3 eggs
2 C milk- soy or dairy
1/8-1/2 C oil (may use more or less as desired)
1 Tbsp brown sugar
1 tsp salt
2 C whole wheat flour
1-2 tsp baking soda

Blend eggs, milk, oil, brown sugar and salt in blender until frothy for about 3 minutes. Pour into bowl and add whole wheat flour and baking soda. Mix the batter by hand. Fry in lightly oiled skillet or on griddle.

Servings: 10 pancakes

Whole Wheat Buns

This is a wonderful addition to nearly any meal that nicely rounds out the menu.

2 Tbsp yeast

3/4 C water, very warm
3 eggs
3/4 C sugar or splenda
3 C milk or soy milk
3/4 C olive oil
1 tsp salt
3 C whole wheat flour
3 C white flour

Add yeast to water. Beat eggs and sugar together. Heat milk to scalding. Mix together milk, sugar and egg mixture, oil, salt and flour. Add yeast to this mixture. Add enough flour to mixture to make a soft dough and knead dough. Let rise for 1 hour. Punch down and form in rolls of desired size. Let rise again approximately 30-50 minutes. Bake buns 10-15 minutes at 400°.

Servings: 30-50 buns

Diet Wrecker Spinach Dip

This appetizer is all that its name implies…but if you like spinach you will adore this dip!

2-8 oz boxes of cream cheese

1 1/2 C fresh Parmesan cheese, grated
1 2/3 C Monterey Jack cheese, grated
1/4 C Cheddar cheese, grated
1 1/2 C sour cream
7 Tbsp mayonnaise
1/2 C milk
5 boxes of frozen spinach, thawed, patted dry
26 oz artichoke hearts, cut into fairly small pieces
1/3 C water chestnuts, shredded or finely chopped
1 Tbsp lime juice
salt, to taste
cayenne pepper, to taste

Preheat oven to 350°. Combine first six ingredients in oven or microwave safe dish and heat to soften until you can mix them easily. Add remaining ingredients and mix thoroughly. Spoon into a fairly deep 9 by 13 baking pan. Bake approximately one hour, covered. Cook an additional 10 minutes uncovered to make the top golden brown.
