Brown Bread

Very traditional bread in New England. Make some today and start a delicious tradition of your own!

3 C Kellogg’s All Bran

3 C sour milk (3 Tbsp lemon juice and sweet milk)
1 1/2 C raisins
3 Tbsp molasses
1 C sugar
3 C flour
3 tsp soda
3/4 tsp salt

Mix together bran, sour milk and raisins. Set aside. Mix molasses and rest of dry ingredients. Mix wet and dry ingredients together. Place mixture into greased cans filling 1/2 full. Cover tightly with foil. Steam 2 hours. Cool and wrap.

Servings: 3 loaves

Swedish Krem (Grape Pudding)

This pudding would make a gorgeous purple presentation in parfait glasses. Could be topped with whipped topping of choice.

1- 12 oz can frozen grape juice concentrate with 2 cans of water

Scant 1/2 C minute tapioca (corn starch may be substituted)

Soften tapioca in reconstituted grape juice for 5 minutes. Bring mixture to boil over medium heat. Boil for one minute or until tapioca is clear, stirring often. When it thickens, cool and put into parfait glasses.

Bran Flakes Blueberry Pancakes

Scrumdelicious pancakes, low in fat and high in taste.

1 C whole wheat flour

1/2 C unbleached white flour
2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1 tsp egg replacer and 2 Tbsp water
1 3/4 C soy milk
1 C bran flakes, crushed to 1/2 C
1 1/4 C fresh or frozen blueberries

Stir together flours, baking powder and salt. Set aside. In medium bowl, combine egg replacer, nilk and crushed cereal. Let stand for 5 minutes. Stir again. Add flour mixture, then add blueberries, stirring just until just combined. Using 1/3 cup for each pancakes, pouring batter onto a hot skillet. Cook until bubbles form on surface and underside is golden brown. Turn and cook until browned.

Traditional Italian Soup

A savory and light soup that will delight the taste buds. Short prep time makes this a good evening time meal for the family.

2 Tbsp olive oil

1 C chopped onion
3 cloves garlic, minced
2- 14 1/2 oz cans  Italian style stewed tomatoes, undrained
5 C chicken broth ( made with McKay’s chicken seasoning)
1 can Great Northern Beans (15 oz), undrained
1 Tbsp dried chopped parsley
1 tsp dried basil leaves
8 oz  uncooked small shell pasta

Saute onion and garlic in oil in a large pit over medium heat. Add the rest of the ingredients except for shell pasta. Bring to a boil over high heat, stirring occasionally. reduce heat to low and simmer, covered, for 10 minutes. Add shell pasta and simmer for another 10 to 12 minutes or until pasta is just tender. Serve immediately.

Black Bean Soup

Wonderful and tasty black beans that can be cooked in a crock pot or regular pot.

4- 15 oz cans black beans, rinsed and drained

2- 15 oz cans vegetable broth
1-4 oz can green chilies
1 med onion, chopped
1 tsp minced garlic
2 tsp olive oil
1 tsp cumin
1/2 tsp thyme
1/2 tsp oregano
grated Jack cheese, optional
diced tomatoes, optional
sour cream, optional

Saute onion and garlic in olive oil until tender. Add cumin, thyme and oregano. Saute 1 minute more. In food processor puree 2 cans of beans and chilies. Add 2 cans of whole beans broth, puree and onions withe seasonings to crock pot or soup pan. Simmer at least 30 minutes in soup pan or in crock pot until steaming. Top with cheese, tomatoes and sour cream as desired.
