Broccoli Salad

An innovative and delicious twist for this wonderful vegetable.

Sauce: (Make 1 hour ahead and refrigerate)

1/2 C sugar
1 C mayonnaise
3 Tbsp raspberry vinegar

4 stalks broccoli, diced into small pieces
1 C cooked stripples, broken up
1/4 C purple onion, chopped
1/2 C shredded cheddar cheese

Toss together the broccoli, stripples, onion & cheese. Right before serving, pour the sauce and toss lightly.

Russian Tea

Great versatility with this delicious tea…serve it hot or serve it cold.

2 C Tang powder
1 10-oz container Country Time Lemonade Iced Tea Mix (decaffeinated)
1 1/2 tsp ground cinnamon
1 1/2 tsp ground nutmeg
1 tsp ground cloves

In medium mixing bowl, combine all ingredients. Store in an air-tight container.
When ready to use, spoon 1 to 3 tsp into a mug of boiling water.

Serving Suggestions: This drink is really nice at a potluck if you can have a percolator of hot water sitting on the counter and a canister of the Russian Tea beside it so people can help themselves and made the drink as strong as they want it. Great on a cold winter day. Can be iced as well in hot weather.

Chicken Crescent Wreath

This will soon become your family favorite.

2 tubes (8 oz each) refrigerated crescent rolls
1 C (4 oz) shredded cheddar cheese
1- 10 3/4-oz can cream of mushroom soup
1/2 C chopped fresh broccoli
1/2 C chopped sweet red pepper
4 pieces Fri-chick, chopped
2 Tbsp chopped onion

Arrange crescent rolls on a 12-in pizza pan, forming a ring with pointed ends facing the outer edge of pan and wide ends overlapping.

Combine the remaining ingredients. Spoon over wide ends of the rolls. Fold points over filling and tuck under wide ends (filling will be visible).

Bake at 375 degrees for 20-25 minutes or until golden brown.

Servings: 6-8

Sometimes I Doubt

Dear God: I was hit with a surging wave of doubt today. About You. Please forgive me, but I’m sometimes bombarded by the fact that everything about You, every claim You make, is invisible and has to be taken on faith. That You exist. That the Bible lessons my parents made me study are true and not a case of massive group hypnosis. That heaven is actually out there. That I’ll have another life, an eternal one, after they drive me to the cemetery.

It feels like I have to choose—every single day—to not be an atheist! And I do choose not to be one, but today it was an exercise of pure will and not much heart.

Please know that I do choose to love You. And that I try each day to think about the good evidences that my Christian faith is based on. But I need Your help. Like that frustrated father who cried to You: “I do believe—sort of. Help my unbelief.”

In Jesus’ name. Amen.

Sweet Potato Souffle

Mashed sweet potatoes with a crunchy sweet topping. A scrumptious side dish to enjoy.

2 C mashed sweet potatoes

2 eggs
1/2 stick margarine
1/2 tsp nutmeg
1/2 c sugar
1/2 tsp cinnamon
1 C milk

Mix all the ingredients and pour into casserole. Bake at 400° for 20 minutes.

Topping:

3/4 C crushed Special K cereal
1/2 c chopped pecans
1/3 C brown sugar
3/4 stick margarine

Melt butter and combine with other ingredients. Spread over sweet potatoes. Return to oven for 10 minutes at 400°.

Servings: 4-6
