Oatmeal-Wheat Germ Crackers

Wonderful crackers to make for a healthful snack, to go with soup or whatever…

3 C quick oatmeal
2 C unbleached white flour
1 C wheat germ (raw or toasted)
3 Tbsp granulated sugar
1 tsp salt
3/4 C canola oil
1 C water
Sesame or poppy seeds (optional)

In a large bowl, combine quick oats, flour, wheat germ, sugar and salt. Set aside.

In a small bowl, combine oil and water. Stir briskly; add all at once to dry mixture. Stir until dough forms a ball. Divide dough into 4 balls. While working with first ball, keep other dough covered.

On an ungreased cookie sheet, roll ball of dough until cracker-thin. Sprinkle lightly with salt and, if you desire, sesame or poppy seeds. Press in seeds with the rolling pin. Score the rolled dough with a pizza cutter to desired cracker sizes (nutritional information is based on 1/60 of a recipe). Bake at 350° F for 12 to 15 minutes or until golden brown. The outside crackers may brown faster than the inside crackers, so you may want to cool the outside crackers on a wire rack and re-insert the cookie sheet into the oven to finish baking the remaining crackers. Cool on a wire rack.

Frog-Eye Salad

Children will especially love the name of this salad and you will love the taste. 2/3 C granulated sugar

2 Tbsp flour
1/2 tsp salt
1 3/4 C pineapple juice (juice from canned pineapple + water)
2 eggs beaten
3 qt water
2 tsp salt
1 Tbsp canola oil
1 16-oz package Acini de Pepe*
3 11-oz cans mandarin oranges, drained
2 20-oz cans pineapple chunks, drained (reserve juice)
1 20-oz can crushed pineapple, drained (reserve juice)
1 16-oz container Cool Whip (approx.), thawed
1 C miniature marshmallows (optional)
1 C grated coconut (optional)

In a medium saucepan, combine sugar, flour, and salt. Gradually stir in pineapple juice and egg. Cook over moderate heat, stirring until thickened. Cool to room temperature. Set aside.

In a large kettle over medium-high heat, bring water, salt and oil to a boil. Add Acini de Pepe. Cook at rolling boil until pasta is tender. Drain and rinse. Cool to room temperature.

In a large bowl, combine dressing and pasta. Mix lightly but thoroughly. Refrigerate overnight in an airtight container.

Remove pasta mixture from refrigerator. Add thoroughly-drained canned fruit and remaining ingredients to pasta mixture. Mix lightly but thoroughly. Refrigerate in an airtight container. Salad may be refrigerated for as long as a week, so it is really good for make-ahead meals.

*A pasta product about the size of BBs. Generally sold in a fox at the grocery store in the same section as other dry pastas.)

Nutty Oatmeal Cookies

Yummy nutty oatmeal cookies to make for yourself, friends and family. These freeze well.

1 C margarine

1 C brown sugar
1 C white sugar
2 eggs
1 tsp vanilla
1 1/2 C flour
1 tsp each: baking soda, salt
2 C quick oats
1 C cereal with raisins, nuts
1 C raisins
1/2 C coconut flakes
1/2 C each: pecans, walnuts, macadamia nuts, coarsely chopped

Cream margarine and sugars in mixer. Add eggs and vanilla. Mix flour, baking soda and salt and add to mixer. Add oatmeal and cereal gradually. Remove mixer bowl from stand and hand stir the rest of ingredients into the batter. Place a heaping tablespoon of batter (12 to cookie sheet) on a non grease/Teflon type sheet. Bake at 350° for 10 minutes. Let cool slightly before removing to cooling rack. Cool completely.

Servings: 4 dozen

Stuffed Cabbage Rolls

Cabbage lovers will love this whole grain and tasty recipe!

2 C ground meat substitute

1/4 c chopped onion
1/4 C chopped parsley
1/4 tsp garlic salt
1/4 tsp sage
1/2 C uncooked brown rice
1 C tofu
10-12 softened cabbage leaves

To prepare the cabbage leaves: carefully loosen leaves from the head. cut out the stem with a sharp knife. Drop in boiling water long enough to make them pliable.

Mix all ingredients except the cabbage. Place the filling on a cabbage leaf near the spine. roll it loosely, folding the sides over the center. Secure with a toothpick. In a large Dutch oven with the bottom lined with 2 or 3 cabbage leaves, arrange the rolls and cover with 2 or 3 cabbage leaves. Cook until rice and meat are cooked.

Macaroni Casserole

Here’s a nice twist on one of the old comfort foods with the addition of vegetables.

2- 8 oz pkgs elbow macaroni

2- 10 3/4 oz cans cream of mushroom soup
1 1/2 lbs sharp cheddar cheese, grated
1/2 C margarine
2 lg green peppers, chopped
2- 4 oz jars pimento, chopped
2- 8 oz cans water chestnuts, drained and sliced
2- 4 oz cans button mushrooms, drained

Cook and drain macaroni. Stir soup and cheese (reserve some for topping) into warm macaroni. Saute onions and peppers in margarine. Add sauteed vegetables along with remaining ingredients to macaroni mixture. Place in casserole dish and sprinkle with remaining cheese and bake, uncovered, at 350° for 30 minutes or until bubbly.

Servings: 12-16
