Peanut Butter Chocolate Dream Pie

A rich and smooth dairy less pie that can be made with carob or chocolate and with your choice of sweeteners. Any choice is sure to be delicious!

1- 12 to 14 oz tub tofu, silken or firm (or 2 aseptic packages)

1 C soy milk
1 tsp pure vanilla
1 Tbsp carob powder or cocoa
1 Tbsp arrowroot or cornstarch
1 Tbsp unbleached flour
1/8 tsp sea salt
1 C of sweetener of choice
1 C natural peanut butter
1 C carob chips or chocolate chips
prepared crust for a 10 in. pie

Drain and paper towel the tofu gently. Place all ingredients except peanut butter and chips in a blender or food processor until smooth. Gradually add peanut butter. Then add chips until they are completely ground up. Pour filling into your favorite pie crust and bake at 350° for 20 to 25 minutes. Cool to room temperature, then refrigerate for an hour or two before serving. Store in refrigerator.

Santa Fe Soup

Enjoy this hearty vegetarian soup chocked full of protein and fiber rich beans.

1 can pinto beans
1 can kidney beans
1 can black beans
1 can whole kernel corn
1 can diced tomatoes
1 can vegetarian burger
1 chopped onion (saute separately)
1 pkg Ranch dressing
1 pkg Fritos scoops
1/2-1 pkg Taco seasoning
Sour cream (as garnish) 

Break up the burger and dump all but the Fritos and sour cream into a slow cooker. Mix well. Turn on low and leave for 6 to 8 hrs. Serve with Fritos and dollops of sour cream.

Servings: 4-6

Marolyn’s Garbanzo Foo Young Patties

Innovative dairy free version of the popular Egg FooYoung.

1/2 C warm water
1 tsp chicken style seasoning
1/2 C dry soy curls (use the crumbs)
1/3 C green onions, chopped fine
1/2 C celery, chopped fine
1/2 C carrots, grated fine
2 C fresh Mung bean sprouts
1/2 C small peas
1 tsp chicken style seasoning
1 C garbanzo flour
1 C water
1/2 tsp salt
1/2 tsp onion powder
2 Tbsp Ener-G Egg Replacer

In a bowl soak the soy curls, warm water and 1 teaspoon chicken style seasoning, while cutting up the vegetables. Cut the green onions, celery, carrots add the peas and the sprouts. Cut up soy curls. In a bowl mix 1 cup of cold water and 2 tablespoon egg replacer, whipping until foamy. Add garbanzo flour, 1 teaspoon of chicken seasoning, salt and onion powder. Add to the vegetables and stir. Pour mixture to form patties in a oiled non stick pan. Stir mixture each time you make a pattie. Serve with gravy.

Gravy:

2 C water
2 Tbsp cornstarch
1 Tbsp Bragg’s Liquid Aminos
1 Tbsp chicken style seasoning
1 Tbsp molasses

Combine ingredients well and heat in a small pan until mixture comes to a boil.

Servings: 6-7

Stuffed Cabbage Rolls

Cabbage lovers will love this whole grain and tasty recipe!

2 C ground meat substitute

1/4 c chopped onion
1/4 C chopped parsley
1/4 tsp garlic salt
1/4 tsp sage
1/2 C uncooked brown rice
1 C tofu
10-12 softened cabbage leaves

To prepare the cabbage leaves: carefully loosen leaves from the head. cut out the stem with a sharp knife. Drop in boiling water long enough to make them pliable.

Mix all ingredients except the cabbage. Place the filling on a cabbage leaf near the spine. roll it loosely, folding the sides over the center. Secure with a toothpick. In a large Dutch oven with the bottom lined with 2 or 3 cabbage leaves, arrange the rolls and cover with 2 or 3 cabbage leaves. Cook until rice and meat are cooked.

Nutty Oatmeal Cookies

Yummy nutty oatmeal cookies to make for yourself, friends and family. These freeze well.

1 C margarine

1 C brown sugar
1 C white sugar
2 eggs
1 tsp vanilla
1 1/2 C flour
1 tsp each: baking soda, salt
2 C quick oats
1 C cereal with raisins, nuts
1 C raisins
1/2 C coconut flakes
1/2 C each: pecans, walnuts, macadamia nuts, coarsely chopped

Cream margarine and sugars in mixer. Add eggs and vanilla. Mix flour, baking soda and salt and add to mixer. Add oatmeal and cereal gradually. Remove mixer bowl from stand and hand stir the rest of ingredients into the batter. Place a heaping tablespoon of batter (12 to cookie sheet) on a non grease/Teflon type sheet. Bake at 350° for 10 minutes. Let cool slightly before removing to cooling rack. Cool completely.

Servings: 4 dozen
