Fake Steak

Good for you and easy to prepare “Fake Steaks.” Goes well with potatoes and your favorite gravy.

1-12 to14 oz tub of extra firm tofu (do not use aseptically packaged tofu)
1/4 C Worcestershire steak sauce
1/2 tsp Liquid Hickory Smoke
2 Tbsp Bragg’s Liquid Aminos
flour
oil  

Drain and paper towel tofu block to absorb water. Cut block into 1/4 inch slices.
Lay slices flat in a large baking dish or plastic container. Prepare marinade by mixing 1/4 cup of Worcestershire and steak sauce, 2 tablespoons of Bragg’s and 1/2 teaspoon of Liquid Hickory Smoke. Pour over tofu slices evenly. Turn over slices to cover thoroughly. Cover and refrigerate several hours or overnight.

Heat small amount of oil in a skillet. Take each tofu slice and gently tap off any excess marinade. Dredge each slice in flour lightly on both sides and saute on medium heat until golden brown on each side. Keep warm until ready to serve.

Servings: 4-6

Overnite Fruit Salad

A delicious fruit salad that is made in advance. Great idea for potlucks, brunches, or as a side salad at lunch or dinner.

1-20 oz can pineapple chunks

1/2 C sugar
2 Tbsp cornstarch
1 Tbsp lemon juice
1 orange (skin only)
1 large red apple
1 large yellow apple
1 banana
1 C seedless grapes, green or red
1-11 oz can Mandarin oranges

Drain pineapple, reserving juice. Combine pineapple juice, sugar, cornstarch and lemon juice in a 2 quart sauce pan. Grate skin of 1 orange and add rind gratings to sauce pan. Cook over medium heat, stirring constantly. Set aside.

Core and dice apples. Slice banana, remove grapes from stems, drain mandarin oranges. Combine all fruit in a 3 quart large glass bowl. Pour hot glaze over fruit, toss gently.

Sugarless Fruit Cake

Wonderful sugar free fruit cake…has the option of using dried apricots or cranberries instead of raisins in the recipe.

2 C raisins

1/2 lb dates
2 tsp cinnamon
juice and rind of one orange
2 C water
3/4 tsp salt
3/4 C oil
1 tsp nutmeg

Boil together for 5 minutes. Make sure that dates have softened. Remove from heat and cool.

Add:
1 C chopped walnuts or pecans
2 tsp vanilla
2 C whole wheat flour
1 tsp baking powder
2 tsp baking soda

Mix well. Spread into 2 loaf pans. Bake at 350° for 1 hour or until baked through. Remove from oven and cool over night before slicing.

Servings: 25-28 slices

Spanish Meat Balls

Recipe allows the sauce to be adaptable, use regular gravy, mushroom or celery soup instead of a tomato base.

1 C walnuts or pecans, ground

1 C grated yellow cheese
1/2 C cottage cheese
1 C cracker crumbs or half bread crumbs
1 onion, chopped very fine
4 or 5 eggs
pinch or 2 or garlic salt

Mix all ingredients together. If too moist, add more cracker crumbs. If not moist enough, add more cottage cheese. Make balls about walnut size. Drop in hot olive oil and fry until brown. When they are brown, place in a casserole dish.

Sauce:

1 onion
1 can tomato soup
1 or 2 cans of hot sauce
2 tsp sugar
pinch garlic powder
pinch of chili powder or as desired
2 tsp minced bell pepper
1-2 bay leaves, whole

Simmer onion in pan used for frying balls. Add rest of the ingredients, tomato soup, hot sauce, and seasonings. Simmer for 30 minutes. Pour sauce over the meat balls. Bake at 350° for 30 minutes. If sauce is made ahead, bake for 15 minutes before serving.

Note: Sauce can be not cooked and baked over meat balls in oven or partially cooked and then added to meat balls.

Gluten Free Blueberry Lemon Bread

Gluten intolerant, but love bread? Take a look at this easy to make quick bread.

1/4 C butter or margarine, softened

1 C sugar
1 egg or 2 egg whites
1/3 C soy milk
1 1/2 tsp baking powder
1 2/3 C gluten free flour
1/2 tsp cinnamon
2 C blueberries, fresh or frozen
2 tsp lemon juice
1 Tbsp lemon zest
1 1/2 tsp Xanthan gum powder

Cream together butter and sugar. Add remaining ingredients and blend well. Pour into greased loaf pan. Bake at 350° for 50 to 60 minutes. Allow to cool before slicing and serving.

Servings: 8-10
